We just bought these pans and tried using them to make breakfast. I started sautéing veggies for an omelette, and everything was sticking immediately to the pan. It was on med/low heat as suggested to begin cooking. I aborted the mission, and went back to my all clad pan. After breakfast, I went to hand wash my pans and the Hestan pans are completely discolored and warped on the interior. (Mind you, this was after one use, medium low heat, and not even being able to cook the meal entirely in the pan.) I saw a few other reviews where the pans looked similar to mine, so I am hoping that this is a defective set, and not indicative of the brand. After my first use, I definitely do not share the enthusiasm for this set that others share. We used cash and gift cards from our wedding to buy this set because I love to cook and wanted a cookware set that would last a long time. So far, it’s been a mixed bag. The good: This set is gorgeous. It looks amazing in our kitchen. The heat distributes evenly and quickly on every piece. You can use it from stovetop to oven. The bad: Two of my pots became noticeably discolored within months of first use. My 8 qt. stock pot has dark splotching on the inside center of the base and my 3 qt. saucepan has marks near the inside corner. I have always used this set according to Hestan’s user manual recommendations. I always use utensils designed for non-stick cookware and always hand wash the pieces. I never use these pieces over high heat and always use oil when I cook. I have used Hestan’s recommended stainless steel cleaner and Bar Keeper’s Friend to try to remove the marks. Neither worked. In short, this set is very nice. But for the money I paid, I hoped for much better. I did not expect permanent discoloration after a few months of use for set that Williams-Sonoma told me would last a lifetime. When I’ve told store staff about this issue, they just tell me to call the manufacturer. I walked into Williams-Sonoma looking for stainless steel pans thinking All Clad. I was tired of non-stick cookware that scratches and always ages badly. I did not intend to spend this much, but as they say "you get what you pay for". I was drawn to the deep color, shine and finish of this product. I purchased the 12.5" skillet knowing there was a 30 day return policy, went home, researched the product on line, and finally tried cooking. WOW! Better than expected. So impressed, I returned and bought the ten piece set. Couldn't be happier. I, too, am obsessed with keeping the "new" look. They clean well and the included cleaner or Bar Keepers Friend removes any blue marks or stains for a "as new" cleanup. Proper pre-heating and adding butter or Pam produces nearly perfect stick free cooking. I bought a second 10 piece set for my winter home in Florida. I’ve been cooking with stainless steel for many years now and these Nanobond pans have some serious upgrades that I’ve never seen before. LOVE the smooth rivets and how lightweight the pans are. I can’t believe how well they clean up, like new. For those with sticking issues make sure you preheat the pan and then turning your heat down a tad. They seem to heat up faster so there’s a learning curve. I’m happy to report I’ve perfected fried eggs in here. Just a little pat of butter or PAM nonstick spray and voila! I used it most every morning to make egg omelettes. Never once did I have an issue with sticking. I simply melted some butter in the pan, poured out the excess and then cooked the omelettes on medium heat with great success. They never stuck once. I never had to use the Hestan cleaner to restore the finish. It was perfect. I was so pleased with the results that I returned the original pan in exchange for the 10-piece set a couple of days ago. I am sorry to report that the pan that came with the set has been the polar opposite of the original pan. In the last 2 days, I have prepared 4 omelettes using the exact some techniques as with the original pan. Everything has stuck like mad. Omelettes now look like some science experiment gone back. It's hard to believe it is the same brand as my original pan. I have had to use the cleaner each time to restore the finish. Extremely frustrating. Not to be deterred, I cooked pasta in the 8 qt. stockpot the other night. While the pasta turned out fine, the finish in the bottom of the pot was speckled with what looked like small rust spots. Again, after a little elbow grease with the Hestan cleaner, the finish was restored. So far, this has been an underwhelming experience. I believe we have 30 days to return so will continue to experiment. It performs to perfection. I have no problem with food sticking in the fry pans because I follow the rule to add oil, preheat the pan, cook then let food self-release. I was very concerned about reports of the pans being difficult to keep looking good. By a mile, these pans are the easiest I have ever had (had All Clad copper core previously). And I am someone who obsesses about keeping beautiful pots looking beautiful. (I know, get a life!) But all it take is some Barkeeper's Friend and always hand-washing. But when I arrived, I noticed this new, shiny, sexy looking stuff called “Hestan Nanobond”. I had not done any previous research, but the feel and finish impressed me. My impulse decision was a great one — this cookware heats very evenly, cleans incredibly well, and is basically non-stick, yet you can still brown and get a great sear. Cleaning is a breeze. These pans are infused with some sort of magic, because that’s the only explanation. Nothing sticks to them. I have burned stuff onto the pan...stuff that normally would require a lot of elbow grease to clean in a standard stainless skillet, and it just wicks right off. Yes, you will find some blue-green streaks in the pans after washing, but cleans off easily with bartenders friend. I don’t obsess over this—-pans are for cooking, not looking! Are the lids heat resistant? Meaning if the get hot while covering the potHello! Thank you for your question. NanoBond lids are made out of stainless steel which is a poor heat conductor compared to the rest of the pan which has a pure aluminum core for excellent heat transfer. Since the lids are made of metal however, eventually they will get hot since heat rises.
