Fall Tamales, Serves 12

Celebrate the flavors of fall with harvest-inspired tamales. These savory snacks are created exclusively for us by Alicia Villanueva, whose delicious street-cart delights made her famous in the San Francisco Bay Area. Showcasing the time-honored techniques she learned from her mother and grandmother in Sinaloa, Mexico, the lard-free tamales are handcrafted in California. Each one is steamed in a corn husk and combines a light, fluffy masa dough with a spicy-sweet filling of pumpkins, yams, butternut squash and acorn squash. A blend of chiles, spices, raisins, nuts, seeds and chocolate adds rich seasonal character.

Receiving Instructions

• Tamales ship frozen with ice packs and may partially thaw during shipment. This is normal. 
• Upon receipt, store tamales in refrigerator for up to 1 week or in freezer for up to 6 months. 

Preparation Instructions

• Tamales can be prepared on stovetop or in microwave. Whichever method you choose, ensure tamales are safely cooked to recommended internal temperature of 165°F.
• Stovetop: Steam tamales for 25 minutes if frozen or 10–15 minutes if thawed.
• Microwave: Wrap tamales in damp paper towel and steam for 4–5 minutes if frozen or 2–3 minutes if thawed.
• Remove husk prior to serving. Serve with salsa.
