Garlic Toast with Tomatoes Recipe

The bread can be toasted on a grill or in a toaster. If using a grill, prepare a charcoal or gas grill for direct grilling over medium-high heat.

If using firm salad tomatoes, core them and then slice about 1/4 inch thick. If using red, ripe salad tomatoes, core and peel them and then cut into 1/2-inch dice. If using cherry tomatoes, cut them in half. Tear the larger basil leaves into a few pieces and leave the smaller leaves whole.

If using a grill, lay the bread on the rack about 8 inches above the fire and toast, turning once, until crisp and golden, about 4 minutes total. Alternatively, toast the bread in a toaster. As soon as the bread is ready, rub a whole garlic clove vigorously over one side of it. The rough surface of the bread will shred the garlic like a grater, leaving very little in your hand after 2 slices are rubbed with 1 of the cloves.

Divide the bread slices, garlic side up, between 2 plates. Arrange the tomatoes in a single layer on the bread, dividing evenly. If you are using cherry tomatoes, squash the halves, cut side down, into the bread. Sprinkle with salt and drizzle generously with the olive oil. Distribute the basil evenly on top. Serve immediately. Serves 2.

  • Rated 5 out of 5 by from This is a real toaster wo all the gadgets A back-to-basics toaster - works great. Only suggestion is that the slots are standard length and some artisan bread doesn't fit cleanly. Width of the slots are more than adequate. The sandwich cage is a must but too bad WS dos not sell. Spend the money if you can afford it.

Rated 5 out of 5 by from BEST TOASTER, AND PRETTY, TOO! I've had my Dualit for about 15 years now, and we use it daily. It is a superb appliance. I had had many cheap toasters before this, and eventually, they all broke...caught on fire, ejected toast, and just plain didn't work. I splurged on this...basically because it was the perfect shade of red. Not fire-engine, but like a subtle Spanish Red, like a great tomato sauce with a splash of red wine. Gorgeous! But for more than $200...how to justify it? Well,.after 15 years, it still works perfectly. No flying toast. No burnt toast. No fires. The construction is like what you'd find on a major appliance, like an oven or dishwasher: heavy-duty metal, with (if you choose a color) a heavy-duty enamel cover-paint that is highly durable. I purchased might at a store, having eyed it for months before I decided to splurge. The cashier was obviously concerned and embarrassed about the high price, and so started to rattle off the assets of the toaster to justify the price. The guy behind me.nudged me and asked, "Why are you spending more than $200 on a toaster?" I said, "Ask him (the clerk); he'll tell you." He said, "No, I want YOU to tell me!" So I said..., "Because it's RED." Reason enough, but what a great toaster! It does not eject toast, but rather keeps it warm after the timer goes off. It has wide slots, so bagels fit comfortably. It takes a while to warm up, so it's a learning-curve, but it's pretty idiot-proof. For your first toast, set the timer for a bit longer, like 2 minutes for crisp toast, but semi-soft English muffins. If you want more immediately, reduce timer or it will REALLY toast your bread, since it's already heated up. Love, love, love this toaster!

Rated 5 out of 5 by from Perfect Toast I've owned this toaster for over a year, and I love it. That being said, it's probably not really worth the cost. I was swayed because it was cute and yellow. It toasts bread and bagels well, though bagels can't be too thick or they won't fit. The toast doesn't pop up when it's done and you can lower and raise it throughout toasting to check doneness, which is nice. There's also a function that allows you to only toast in one slot for one piece of bread. There's a tray that slides out at the bottom to catch crumbs, so clean-up is easy. There's no annoying bell at the end of toasting; the toaster just turns off. And every piece of toast is done to the same specifications whether it's the first piece or the 20th.

Rated 5 out of 5 by from Best Toaster Ever!!! I've used this toaster for one year and one month. It is one of the best items I've ever owned. The Azure Blue is gorgeous on the countertop... Would not dare hide it away. It toasts all breads very well and bagels too. It is best to keep an eye on it, as an open window with a breeze will make it toast very hot and scorch the bread! It is a joy to use everyday! It makes having breakfast very pleasurable. Nice gift for a Foodie.....

Rated 5 out of 5 by from Warm and wonderful We've had this toaster for about 5 years. The toast is perfect, but the big trick is to remember to turn the dial all the way to the left and wait for about a minute before putting the bread into the slots. The heat coils come on gradually, so you need to look in and be sure that the lights are glowing on all of the coils. It's an art to use this well. You'll need to decide when to drop in the bread and when to pop it up. But once you get the knack of using this toaster, you'll love it! We bought the red color. It's a joy to experience this warm and wonderful little toaster. Well worth the investment!
