- Tomato Ham and Fontina Frittata
In a bowl, whisk together the eggs and Parmigiano-Reggiano cheese, and season with salt and pepper. Fold in the fontina cheese; set aside.
In the deep half of a frittata pan over medium heat, warm the 1 Tbs. olive oil. Add the onion and cook, stirring occasionally, until softened, about 7 minutes. Add the ham and cook, stirring occasionally, for 1 minute. Add the egg mixture and cook, using a rubber spatula to lift the cooked edges and allow the uncooked eggs to flow underneath, until the eggs are just beginning to set, 8 to 9 minutes.
In the shallow pan over medium-low heat, warm the 1 tsp. olive oil. Arrange the tomato slices in a single layer on top of the egg mixture. Place the shallow pan upside down on top of the deep pan and flip the frittata into the shallow pan. Cook, covered, until the eggs are set, 6 to 7 minutes. Uncover the pan and gently flip the frittata onto a platter. Let rest for 5 minutes, then garnish with the basil. Cut the frittata into slices and serve. Serves 8.

Rated 2 out of 5 by Deacon from Should be better Purchased these pans about a year ago. Be aware, these are skillets, not omelette pans. The steep sides hold liquids well but are not designed for sliding out omelettes or crepes. They work well for their intended use. The problem is that the handle on the 8” pan is short. It doesn’t balance the pan well and positions the hand much too close to the burner. If a pot holder or towel is used to protect the hand, it is so close to the burner that it is subject to catching on fire. To compound this defect, the handle is painfully uncomfortable to hold. The end is pointed and jabs into the hand.Date published: 2019-05-07Rated 2 out of 5 by fmNYC from Only non-stick for a year or two I bought the 10" and 8" set at most 2 years ago and they now stick, even with oil. And we've never put them in the dishwasher; always use plastic or wooden utensils, and no abrasive scrubbing. The build quality is good but the non-stick material doesn't last.Date published: 2019-05-03Rated 5 out of 5 by MTerrington from Not disappointed! I used these two pans within 24 of receiving them. I was first struck by the appearance, really nice looking pans. They're 1/4" thick and heavy without being too heavy. The handle is solid but lightweight and has enough bulk to make it easy to pick up and flip food. Also, the cooking surface is flat (my last "highly recommended" pans did not have a flat cooking surface), and they cook very evenly. The non-stick surface is a bit different from what I normally see in a non-stick pan. You can see it's a durable surface and the surface did it's job. I will still be careful with the finish. Both pans cleaned up easily and are hanging on the pot rack in my kitchen. Since I hang the majority of my pots and pans on a rack I'm particular about cleaning them. I'm very happy with this purchase.Date published: 2019-01-07Rated 3 out of 5 by Mary from Disappointed Bought these about 3yrs ago, loved using them about 5 times a week, great for making breakfast. But both pans are no longer working, everything sticks, so sad, now researching for replacement.Date published: 2018-12-25Rated 5 out of 5 by D kitchen from Great pans! I've used daily for about 1.5 years I see all the bad reviews, but I have had a really good experience with mine. I have had mine for about a year and a half and they work perfectly. No flaking or scratching. I use them daily but don't use metal utensils in them.Date published: 2018-11-22Rated 2 out of 5 by Jess from Great pans before they started flaking! I received these pans as a gift last Christmas. I absolutely loved the size and weight of them and they cooked beautifully. Now, however, my 10” pan is flaking despite very careful hand washing and proper care of the pan. Now I am going to have to throw it out.Date published: 2018-11-03Rated 1 out of 5 by Mooloo from Sticky non stick pans I own three of these pans 8, 10 and 12 inch. They all stick. I've had them for about 18 months and within 8 weeks of owning them I knew they were problematic. There is a center c shaped burn out spot on all three and the non stick surface sticks. The surface hasn't flaked off as others have experienced but the surface is very dull. My egg whites stick every morning. Ugh. Like many others I suffer through daily because, while they are not the most expensive in the market, I can't afford to replace often so I've suffered through using these waiting for the quality to improve based on recent reviews. Looks like that is not happening. Love the size and weight of the pan but sadly they all stick.Date published: 2018-10-20Rated 1 out of 5 by Enjoicow from Do Not Recommend I was very excited about this purchase because it was my first big adult purchase when I moved out of my moms' house. I wanted to be more mindful with my budget and thus, one of my goals was to cook more and eat out less. I did extensive research and settled on this set. However, less than two years after the purchase (average use of 5-6 times a week), these pans are no longer nonstick. I submitted a request to Calphalon for these to be replaced. In the meantime, I will look for another set. Hopefully, I will get my money's worth this second time around. I am definitely very disappointed with this purchase.Date published: 2018-05-22
