- Ideal for gas and electric cooktops (not induction compatible).
- Safe for use with metal spatulas, spoons and whisks as well as nylon, silicone, coated or wooden utensils.
- Do not use other types of metal utensils, such as forks or knives.

- Do not use aerosol cooking sprays; buildup over time will cause food to stick.
- Allow pan to cool before washing.

- Avoid using steel wool, steel scouring pads or harsh detergents.
- Stubborn food residue and stains can be removed with a nylon scrubbing pad and a fine-powdered cleanser.

- Broccoli Rabe with Garlic Recipe
In a nonstick fry pan over medium-high heat, warm the olive oil. Add the garlic and cook, stirring constantly, until just golden, about 1 minute. Transfer to a small plate.
Add one-third of the broccoli rabe to the pan and cook, stirring occasionally and adding the rest after the first batch begins to wilt. Season with salt and pepper and stir in the red pepper flakes. Cook for 1 to 2 minutes, then add the water. Cover and cook until the broccoli rabe is crisp-tender, about 5 minutes. Transfer to a serving bowl, top with the sliced garlic and serve immediately. Serves 4.

Decent browning, even heating and cooking and simple cleanup. And the surface has held up beautifully, even with the occasional use of metal utensils. We never cut anything in the pan, of course. Whatever pan you use, you won't do it or your knives any favors doing that. But stirring, scraping up browned bits and such, no problem. I was looking for an omelette pan and this set was sold to me as a good value and dishwash safe. Either they're not really dishwash safe or they're not made well. Less than 5 years, the fry pan has lost a lot of the non stick coating especially along the edge and somehow the interior has chipped away despite our only using wood and silicon. I previously owned the fritatta set and those pans lasted longer. They worked great in the beginning and the saute pan still looks/work well, but the frying pan looks terrible, does not work well, and the non-stick coating is now flaking off. We always cook at low to medium heat on a gas range using both pans and the only time we ever use a metal utensil is a spoon for sauces and we're extra gentle with that. The fry pan formed a weird mark in the center of the pan pretty early on and that's where the coating is flaking now. I don't know if there's any kind of warranty with these pans, but not even getting two years out of a pan is pretty disappointing. Let me say that Calphalon's customer service has been top of the line in this matter. They have held to their warranty and replaced this pan 4 times without a fuss. Over the last 3 years this pan has never seen temps over low to med heat, never!!! It also has never come close to water if it was over body temperature. That all being said, this pan does not hold up to daily use. It starts to warp at about 3 months. If you do a lot of eggs as I do, omelets specifically, you'll see when it's about to happen as your omelet won't slide around the pan no more, it'll start to stick and burn in the middle, then comes the warpage. This isn't a plug for T-fal, but I have a T-fal red dot that I paid $19.00 years ago that out performs this pan by a long shot. At first, Calphalon did try to blame it on my glass top stove, but no where does it say NOT to use on a glass top stove. If your looking for something that looks nice hanging in your kitchen, this is your pan. If you want something that really does work and lasts, don't buy this one folks. And a big thank you to Calphalon for replacing this pan so many times. I am done though, tired of holding on to the box because I know what's coming, and tired of paying the return postage, I shouldn't have too!!!Date published: 2018-01-27
