- Pizza stone: To avoid damage, wipe surface with a soft, damp sponge after each use. If more thorough cleaning is required, remove stone with extreme care, then clean top with firm sponge and warm, soapy water. Rinse and dry thoroughly; never soak stone or place in dishwasher. Unplug oven before reinstalling the cleaned stone.
- Pizza peel: Dishwasher-safe. Avoid abrasive cleaners and metal scouring pads, as they may damage the surface.
- Pizza pan: Requires initial seasoning. Follow instructions included with the oven before first use.

I got this pizza oven for my husband as an early birthday gift --- we made one beautiful pizza -- read all the instructions but as we went to clean the pizza stone once cooled there was a BIG CRACK! What a bummer! What a pain to start the process of trying to get it replaced. I am still in the process of learning all the different ways to cook different kinds of pizza. I have worked at perfecting my NY Style dough and sauce. With the Breville - BAM!!! I am in LOVE with Neapolitan. The "wood-fired" setting and such simple ingredients in the dough, sauce, fresh mozzarella and basil leaves yields an absolutely purist and delicious pizza. I have been converted. It's just hard to beat the flavor of a wonderfully charred crust. To be honest- Why do they have a frozen pizza setting? I mean really? I am on to pan pizza this weekend. We will see how that goes. Further to work with the customizable controls and see how that can improve upon a easy to use though not inexpensive oven. It is a great time to be making pizza!! There is so much to like about this product. I have been making my own homemade pizza crust/pizza for 12 years for family and friends with them asking me to make pizza for them and their families. I read the instructions backwards and forwards for the manual setting and the pre-settings. I heated the stone as indicated and preheated the oven as the instructions indicated. I tried this four times. My pizza came out burned on the top and half cooked on the bottom, no matter what setting it was on. I used the crust only, even cooking also and it did not work; the top was burned and the bottom was half cooked each time. It took more than 20 minutes in between each pizza to preheat. We like thin and crispy and that is no where what we got with his oven. It may be that its better use for the thicker crusts and pan pizzas. I really wanted to like this oven because I have mostly Breville products and was hoping I could make my pizzas faster when we had our pizza parties with family and friends but that wasn't the case. I'm Executive Chef of Zoli's NY Pizza in Dallas, and was gifted a Breville Smart Oven Pizzaiolo. I have a live demonstration at Williams-Sonoma here in Dallas, November 3rd. After testing this oven, I am in awe. It cooked all of my test pizzas beautifully. Super crispy, perfect bake throughout the pizza in just 4 minutes. I would recommend this oven to anyone looking to make authentic pizza at home. I love everything about this oven. The oven was easy to set up the first time using it. We made the pizza dough about an hour before cooking it (the neopolitan crust takes longer to proof, which is what we bought the oven for), so, the dough itself was nothing fancy, but we used the Neopolitan setting anyways. The crust that came out of the oven was, hands-down, the best that we have ever achieved at home in a hot, gas oven with a good pizza stone. I have never seen such beautiful charring and cooked pizza crust throughout the pizza. The fact that the pizza cooks in 3-4 minutes is another amazing bonus. We cannot buy anything close to Neopolitan pizza where we live, but we can now come much closer to making it at home (with Bufala mozarella, san marzano's, good olive oil, and basil sold at your nearby natural food store)! Yes, this is expensive, but it works great and I expect many fun pizza nights making and serving Neopolitan pizza (you can make other styles, but, why would you?).The interior of the oven is small and just took a little getting used to, but by the end of the night, it felt natural. It makes a roughly 10-11" pizza, which fits easily on the peel and in the oven. However, I don't view this as a problem as it is not easy to manipulate a pizza on a peel any bigger than that anyways, and I have not had much success making ones at home any bigger. Given how quickly they cook, it just means everyone cooks their own pizza, which works great anyways. I recommend watching videos about how to stretch a Neopolitan pizza dough ball. It helps to get a nice round pizza that fits. Using Semolina is key too! I wish we had this years ago. But, I would avoid the printed instructions “remove stone with extreme care, then clean top with firm sponge and warm, soapy water.” NEVER use soap on a pizza stone.
