- Affogato Recipe
In a saucepan over medium heat, whisk together the milk, cream and salt. Heat until bubbles form around the edges of the pan.
In a bowl, whisk together the egg yolks and sugar. Slowly add the warm milk mixture, stirring constantly until blended. If using a vanilla bean, stir in the seeds now. Transfer the mixture to a clean saucepan, set over medium-low heat and cook, stirring constantly with a wooden spoon, until the custard thickens and a finger drawn across the back of a spoon leaves a path, 5 to 7 minutes.
Pour the custard through a fine-mesh sieve set over a clean bowl. If using vanilla paste, stir in now. Place the bowl in a larger one filled halfway with ice and water and let cool, stirring occasionally. Refrigerate for about 2 hours.
Transfer the custard to an ice cream maker and freeze according to the manufacturer's instructions. Transfer the gelato to a chilled container, cover and freeze for at least 3 hours or up to 3 days.
Scoop the gelato into bowls and top each with 1 shot of espresso. Serve immediately. Serves 8 to 10.

First, I want to point out what we love- espresso tastes amazing, couldn't be more convenient to use, turns on automatically in the morning (has been a joy to drink quality espresso together before we leave the house in the morning), looks beautiful in the kitchen, has provided entertainment to friends/family during gatherings, will save us money in the long run (no more trips to the cafe), & we feel like we're being better stewards of the earth in cutting back on all of those disposable cups & burned fossil fuels driving to the cafe. With that said, this machine is not perfect & takes some discipline in cleaning. In 2 weeks we've had to troubleshoot 2-3 time, but each time has fixed the problem. 1st - the "Descale" prompt came on after just 1 week. "Oh Boy!" (my husband was ready to return), but we followed the steps listed on an independent blog post & were able to cancel out the prompt & reset the machine. (Basically, held down the 1-cup button & power button simultaneously. Next, select reset, & re-entered the water hardness, etc.) 2nd - The grinder got clogged & beans would not flow properly. This was an easy fix; turn machine off - remove burr grinder - clean everything well (according to directions in manual & using tools supplied w/machine) & start a new grind at 45. After that we could set our grind back to 29 & it worked perfectly again. 3rd - The water line to the group head had some sort of challenge where it would start & then stop at 5 seconds - no espresso would flow through the portafilter (I don't know if there was air in the line or too much pressure) but, basically we turned the machine off & let it cool down. Opened the front descale valves, starting with the valve on the right & then the left. Once all of the water drained out of the boiler we closed the valves & restarted the machine. The machine worked beautifully after that. Overall, we are very happy with this machine despite the few challenges we've experienced. We haven't had to call customer support because there's a large online community of DB/Oracle owners out there who have provided awesome video resources, blogs, etc. If you're handy with a flathead screwdriver, can read/follow directions well, & love espresso than this is a good machine for you. After months of reading various online reviews and comparisons of espresso makers in the $600-$2000 price range, I took took a deep breathe and pulled the trigger on purchasing the Breville Oracle. The three hour drive home gave me plenty of time to cycle back and forth between excitement & remorse on such a large purchase. After having used the machine daily for 4 months without any hiccups, we are sold on this product. I recommend reading the instruction manual completely. As painful as it is do this before using the machine, it provided me with a solid reference in using the machine and for changing any of the factory settings. Also watch the videos/tutorials on YouTube! Before this purchase, my wife and I were already using whole beans from a local organic roaster in our drip coffee/espresso combo machine. Luckily or coincidently, these beans worked perfectly at the default factory settings on the Oracle. As we strayed to try other beans/roasts (Italian, Ethiopian, etc.) we needed to adjust the coarseness of the grind to pull that perfect shot of espresso. The one surprise for us was the machine was louder than we anticipated when power was first applied and the machine "booted up". It was a little discerning at first, but we have become accustomed to it and I suspect it's probably in line with other machines in this category. On another note, the machine was about a 1/4 inch too tall to fit under our kitchen cabinets. This could be an issue for some. For us, depth of our counters still allowed for us to put it where we wanted, although we lost some functionality of counter space. We haven't used the descale function yet, so can't speak to the issue in some of the other post(s). Our water supply doesn't seem to pose any challenges scale or deposits and we change the water filter in the machine every two months. The water we add to the machine is also already filtered from our refrigerator, so the water is essentially being filtered twice. For us, the machine has been great and it kind of transformed us into blue collar coffee snobs. This machine was a big purchase for us and there's no doubt we had reservations about it. Now that we've tried it, we would be hard pressed to go back to old drip/espresso machine stored in the garage. We ordered it in the store and it was on back order for 2 months. We had a La Pavoni that lasted 12 years. We purchased a new machine because we had difficulty finding an authorized technician who could maintenance on the machine in the US. After an extensive search and due to glowing reviews, we purchased the Breville Oracle. There is no way that this machine performs like a commercial machine as stated in other reviews. The shots are not consistent and we have gone through pounds of fresh coffee beans. We even went through the advanced settings to continue tweeking the machine. One would think that your could order supplies from Breville for their machine from their website: water filter replacements, steam wand cleaning tablets, etc, but this is not possible. You have to go do an internet search for your maintenance supplies. The only function that it does well is steam the milk. Our last experience was an error message that requires shipping the machine to an authorized dealer. We decided to cut our losses after 2 years and get rid of the machine. The descale doesn't work, so try that as a first step, so that you can return it in the first week when it fails. My unit failed in the fourth step of descaling, with the "valve" error, followed by a failure to heat up higher than 160 degrees in the normal settings. On top of these failures, Breville claims to have a dedicated phone line with experts on the Oracle. Each time I called I was on hold for 45 minutes or more. They had no solutions to offer for any of these issues, aside from turning it off and on, and draining out the water. (As if I hadn't already done all of that.) I purchased the unit in a William Sonoma store, and because I tried descale in the first week, they accepted the return no questions asked. Instead of this, buy Saeco or Jura, and the latest Jura Z-6 model is stocked by William Sonoma. The Jura costs significantly more, but the higher price is worth it. It is a hybrid manual-automatic with very simple but useful features: things like the dial that lifts it on its wheels for repositioning, the tool tray, and the on/off timers. Once programmed the espresso cup buttons are pulling shots that are about 40% crema…the best shots I have ever produced. The milk frothing system is genius. I never liked the milk reservoir concept on super-autos and manually steaming can be imprecise. The auto-steaming function creates precise texture and temperature. Then there is the Americano button which simplifies and unifies your Americano output. You can manually control any feature above. Other great features include the grinder which doses, tamps and polished, front tank fill access, auto steam wand purging, easy programmability, well-conceived descaling access, etc. So far my results are superior to more expensive semi-auto espresso machines and, of course, in a completely different league from super-automaticsDate published: 2016-04-01
