Since the sides do not slope much it allows for a large cooking surface. The balanced double handles also make it much easier to carry than a long handle skillet with a helper handle. I chose this pan because its stainless steel interior would allow me to cook at high heat, and the small handles make it easy to store in my cabinet. I brought the pan up to heat gradually, to ensure even cooking. The steak seared really really well, and the cream sauce took care of the bits stuck to the pan. The ground pork did not stick at all. Can you explain the difference between the 'All in one pan', 'Essential pan' and 'Weeknight pan'? The dimensions all seem quite similar.Hi Colleen, An All-in-One Pan has a wide flat surface, perfect for searing and sautéing. This pan features two loop handles so it's a great pan to cook on the stovetop/in the oven, then take to the table to serve out of. An Essential Pan features high, rounded sides and a wide surface area to facilitate sautéing and the stirring of ingredients. It has one long handle and one loop handle. A Weeknight Pan is a hybrid sauté pan/saucier and can take on all kinds of one-pot meals such as quick sautés, pasta tossed with sauce, risotto, simmered stews and curries and braised meats. Can someone advise if the 6 quart is really big? I cant tell from the pic. Also has anyone tried pan frying fish with this one?Hi Isha, The dimensions of the 6 quart pan is 13 1/2" diam., 3 1/2" high. Are you wanting to pan fry a whole fish or fish fillets?
