Beef and Broccoli Curry Recipe

Put the broccoli and water in a microwavable bowl. Cover and cook in the microwave on high until the broccoli is just crisp-tender, 3 to 4 minutes.

In a large nonstick fry pan over medium-high heat, warm the oil. Season the beef lightly with salt and pepper. Working in batches, add the beef (do not crowd the pan) and cook, turning once, until just browned, about 1 minute per side. Transfer to a plate.

Add the shallots and ginger to the pan and sauté until fragrant, about 1 minute. Add the curry paste and stir for 2 minutes. Add the coconut milk, brown sugar and fish sauce and simmer, stirring up the browned bits, until the sauce thickens, about 2 minutes. Add the broccoli and beef and simmer until heated through.

Fluff the rice with a fork and divide among 4 warmed bowls. Top with the beef-broccoli mixture. Sprinkle with the basil and serve immediately with lime wedges to squeeze over the top. Serves 4.

Butternut Squash Ravioli Recipe

To make the filling, preheat an oven to 400°F (200°C).

Prick the 1-lb. (500-g) piece of squash several times with a fork and place it on a baking sheet.

Roast in the oven until tender when pierced with the tip of a knife, 45 to 50 minutes. Set aside to cool.

While the squash is cooking, in a small sauté pan over medium heat, warm 1 Tbs. of the olive oil. Add the shallots and sauté until translucent, 2 to 3 minutes. Remove from the heat and set aside.

In a food processor, combine the pepitas and walnuts and pulse until finely chopped. Add the shallots, egg yolk, cheese, lemon zest, nutmeg and a large pinch each of salt and pepper.

When the piece of roasted squash is cool enough to handle, scrape the flesh from the peel into the food processor with the egg yolk and cheese mixture. Process until the mixture is smooth. Transfer to a bowl, cover and refrigerate until completely cool, at least 1 hour or up to overnight.

Divide the pasta dough in half. Using a pasta machine or a floured rolling pin, roll out one of the dough halves about 1/16 inch (1.5 mm) thick. Using a knife, lightly mark the dough into 1 1/2-inch (4-cm) squares. Place 1 tsp. filling in the center of each square. Roll out the remaining dough in a rectangle of the same size and place it over the filling. Lightly press down around each mound of the filling to seal the ravioli. Using a pastry wheel or knife, cut around each mound of filling to make 1 1/2-inch (4-cm) squares. Crimp the edges to seal. (The ravioli can be made up to 2 hours in advance. Place in a single layer on a floured kitchen towel, dust the tops with flour and cover with another towel.)

When ready to serve, in a sauté pan over medium heat, warm the remaining 2 Tbs. olive oil. Add the sliced squash and cook until tender, about 3 minutes. Remove from the heat and keep warm.

In a small saucepan over medium heat, warm the butter until melted, stirring constantly. When the butter is hot, add the sage leaves and cook until crispy, 1 to 2 minutes. Using a slotted spoon, transfer the leaves to a paper towel–lined plate. Continue cooking the butter, stirring constantly, until all of the milk solids turn golden and the butter has a nutty fragrance. Be careful not to let the butter burn. Remove from the heat and keep warm.

Bring a large pot three-fourths full of salted water to a boil. Gently drop half of the ravioli into the boiling water and cover the pot. When the water returns to a boil, uncover and cook, stirring occasionally, for 3 to 5 minutes. To test for doneness, transfer a single raviolo to a cutting board and cut off a corner with a paring knife; if the pasta looks cooked through and the corner is tender, the pasta is done. Using a skimmer or slotted spoon, transfer the ravioli to a serving dish. Repeat to cook the remaining ravioli.

Drizzle the brown butter over the ravioli, then sprinkle evenly with the sage leaves and butternut squash slices. Garnish with pepitas and serve immediately, passing more cheese alongside. Serves 6.

I’ve been using pieces from this set for about 6 months, and getting used to the differences between Staub, which I used every day for nearly everything, and All-Clad skillets and sauté pans. It takes a bit of a learning curve, but after viewing some Williams-Sonoma and All-Clad videos, the cooking in the pans turned out phenomenally, and the clean up was nearly as easy as with my Staub Collection. I was thrilled to find a D5 set in polished, and which included each of the “essential” pieces recommended by Ina Garten. Once again, Williams-Sonoma was fantastic!

This set was just one of many pieces I purchased and I've been thrilled with my purchase! This was definitely better than the big box store stainless cookware my wife and I had been using for over a decade. The All-Clad cookware just exudes quality! Each piece has a perfect weight and heft to it, not to mention perfectly designed handles to allow for the easiest ergonomic use. I have found these pans heat quickly and evenly and cook wonderfully. I have found that no matter what I cook, Bar Keeper's Friend brings my pans and cookware back to a shiny, like-new condition. The only regret I have is that I didn't invest in All Clad stainless cookware sooner!

As a professional cook, I cook with a lot of different brands and All-Clad is my favorite. I see most of the negative reviews on here are from people who don't know the proper techniques of cooking in result providing them with a bad experience with this product. Some of the greatest American Chef's use this product for a reason. If you know the proper techniques of cooking you won't have difficulties with this brand. It is one of the best for a reason.

    Rated 5 out of 5 by from excellent and beautiful I recently got an induction cooktop and my beloved Calphalon aluminum I've had since 1985 can't be used. I chose these as a replacement and I'm beyond happy with the product. Heat distribution is excellent. Cleaning is a breeze partly because they are dishwasher safe, but also because food does not stick. Even eggs and fish slide out like a non-stick pan. The stay cool handles feel great in my hands. Finally, they are really pretty. The only warning I would give is that they are heavy. Not unduly heavy for me, but if this is an issue I would recommend going to a store to pick up the pans and see how they feel to you.

They still look new even though I cook with them a few times a week. The food cooks more evenly in these pans than I've ever had before in other pans. They are very easy to clean by hand (with a little Barkeeper's Friend) and are also dishwasher safe. They are a bit heavy so keep that in mind.

I read hundreds of reviews about stainless steel pans, then All-Clad, talked to friends and to be honest I was really worried about the clean up....well this is where the total surprise comes in....I cook with low to medium heat, heat the pan completely before adding any food, cook the food and then if deglazing is in order this easily removes any food that may have gotten stuck on while cooking. If you aren't deglazing, simply let it cool, add hot water and soap, it can soak and then use Bar Keeper's Friend and with a few easy scrubs the pan is shiny and looks like new!! I'm a very lazy cook and hate the cleanup, but guess what....I LOVE to clean these pans and return them to the incredible shine!! I have recommended these to friends and family....I am absolutely sold and continue to be totally surprised about how much fun they are to use AND to clean! Haha!!
