Valencia Martini


  • 1/2 oz. fino sherry
  • 3 orange peels for flaming (see related
      tip at right)
  • 2 1/2 oz. vodka


Coat the inside of a martini glass with fino sherry and toss out the excess. Flame 2 of the orange peels into the glass and discard. Chill the vodka and strain into the seasoned glass. Garnish with the last flamed orange peel. Serves 1.
