Fresh broccolini is best prepared simply to allow its sweet flavor and tender texture to shine through.
- 3 Tbs. extra-virgin olive oil
- 2 lb. (1 kg) broccolini, trimmed
- Salt, to taste
- Pinch of red pepper flakes (optional)
- 2 Tbs. chopped shallots
- 1 Tbs. chopped garlic
- 1/4 cup (2 fl. oz./60 ml) water
In a large sauté pan over medium-high heat, warm the olive oil. Add, in this order, the broccolini, salt, red pepper flakes, shallots, garlic and water. Cover the pan and cook until the broccolini is tender, 6 to 8 minutes. Serve immediately. Serves 6 to 8.
