Sausages with Ratatouille

The ratatouille is also delicious served with broiled or grilled lamb chops that have been rubbed with garlic and olive oil and sprinkled with salt and pepper.

Ingredients:

  • 4 large or 8 small smoked sausages, such as kielbasa
  • 1 Tbs. olive oil
  • 4 cups ratatouille (see related recipe at left)

Directions:

Cook the sausages
Slit each sausage diagonally several times on each side. In a fry pan over medium heat, warm the olive oil. Add the sausages and cook, turning once, until browned on both sides, 8 to 12 minutes total.

Warm the ratatouille
Meanwhile, in a saucepan over medium heat, warm the ratatouille, stirring occasionally to prevent scorching, until hot, 8 to 10 minutes. Divide the ratatouille and sausages among 4 plates and serve immediately. Serves 4.
