Lime and Ginger Smoothie
Freshly squeezed lime juice and ginger root give this green smoothie plenty of zip, making it a flavorful yet healthy way to start your day.
- Juice of 3 limes
- 2 Tbs. water
- 1 Tbs. honey
- 1 cucumber, chopped
- 1 green apple, cored and chopped
- 2 kale leaves, stemmed and coarsely chopped
- 2 Tbs. peeled and chopped fresh ginger
- 2 cups (8 oz./250 g) ice cubes
In a Vitamix blender, combine the lime juice, water, honey, cucumber, apple, kale, ginger and ice cubes. Puree, slowly increasing the blender speed to high, until smooth, 1 to 2 minutes. Divide between 2 glasses and serve immediately. Serves 2.
