A squeeze of fresh lemon juice brightens the flavors of the other fruits and vegetables and also helps to balance the acidity in your body.


  • 6 kale leaves, stemmed
  • 2 cups spinach leaves
  • 1/2 cucumber
  • 4 celery stalks
  • 2 apples
  • 1-inch piece fresh ginger
  • Juice of 1/2 lemon


Wash the kale, spinach, cucumber, celery, apples and ginger well, then cut them up as needed to fit through the chute of your juicer. Juice the ingredients (except the lemon juice) in the order listed according to the manufacturer’s instructions. Stir in the lemon juice and serve immediately. Serves 1.
