Breakfast Pinwheels

Eggs, cheese and ham tucked inside a tortilla – yum, what could be better for breakfast!


  • 4 eggs   
  • 1/2 cup shredded cheddar cheese 
  • Big pinch each of salt and freshly ground pepper 
  • 2 Tbs. unsalted butter   
  • 2 whole wheat tortillas, each 6 inches in diameter 
  • 4 slices of ham   


In a bowl, whisk together the eggs and 1/4 cup of the cheese. Season with salt and pepper.

In a sauté pan over medium heat, melt 1 Tbs. of the butter. Add the eggs and cook, stirring constantly with a spatula, until cooked through but still soft and moist, about 6 minutes. Remove from the heat, transfer to a bowl and set aside.

Lay the tortillas on a work surface. Scoop half of the scrambled eggs onto the top of each tortilla. Sprinkle the remaining 1/4 cup cheese on top of the eggs, dividing it evenly between the tortillas. Top each tortilla with 2 slices of the ham. Working from the edge closest to you, roll up each tortilla.

Cut each rolled tortilla into 3 pieces. Pierce each piece with a toothpick to secure and serve immediately. Serves 2.
