This warm, creamy breakfast cereal is the perfect canvas for your favorite toppings: diced Gala apples, chopped toasted pecans, heavy cream or a simple drizzle of maple syrup.
- 2 1/2 cups milk
- 2 cups water, plus more as needed
- 1 tsp. kosher salt
- 1 cup medium-finely ground spelt and emmer blend
In a large saucepan over medium-high heat, combine the milk, the 2 cups water and the salt and bring to a simmer. Reduce the heat to low and slowly add the spelt and emmer blend while whisking constantly. Cook, whisking occasionally, until the grains are softened, about 10 minutes. Adjust the consistency as needed with more water.
Spoon the cereal into bowls and serve immediately. Serves 4.
