For maximum crunch, this zippy variation on classic coleslaw should be made no more than 2 hours before serving. The dish makes a fine companion to fried chicken or burgers.

Ingredients:

  • 3 Tbs. Dijon mustard 
  • 1/4 cup firmly packed light brown sugar 
  • 3 Tbs. malt vinegar 
  • 1 1/2 tsp. mustard seed oil or very spicy mustard such as English or German 
  • 1 1/2 tsp. kosher salt, plus more, to taste 
  • 1/4 tsp. freshly ground pepper, plus more, to taste 
  • 1 cup mayonnaise 
  • 3 cups thinly sliced red cabbage 
  • 3 cups thinly sliced green cabbage 
  • 1 1/2 cups shredded carrots 
  • 3/4 cup shredded red onion 

Directions:

In a large bowl, whisk together the Dijon mustard, brown sugar, malt vinegar, mustard seed oil, the 1 1/2 tsp. salt and the 1/4 tsp. pepper, whisking until the sugar dissolves. Whisk in the mayonnaise.

Add the red and green cabbages, the carrots and onion and toss until the vegetables are coated. Cover and refrigerate for 30 minutes.

Strain the coleslaw. Taste and season it with more salt or pepper if desired. Serves 6.

Rated 5 out of 5 by from Excellent with BBQ food First time that I've ever made coleslaw, and it was very easy. The recipe had to be altered to meet dietary requirements of a guest; No onion. Due to now Dijon on hand, I substituted 3 teaspoons of dry mustard, substituted balsamic vinegar for malt vinegar, and did not add the spicy mustard. Next time, I will offer crumbled bacon in a side cup for sprinkling on, so that it doesn't sit in any unused coleslaw and get soggy. HUGE hit with the BBQ pig!

I mean...let me say there were fireworks! Everyone else loved it too. I will be making this one forever! Thanks for sharing the recipe.

Rated 5 out of 5 by from Amazing Flavour Combo This was such a surprise. I figured it would be good, but it exceeded my expectaions. This is fantastic on its own or on a burger or in a wrap. It does have a fairly strong onion flavour, so if that isn't your preference, you may want to cut it a bit. Also, you do need to drain this. I wouldn't skip that step. Othewise it gets soupy and eventually soggy and soft. The dressing, before the veggies are added, is so terrific. The flavours blend beautifully. I am thinking that the dressing might be great as a burger sauce. I recommend this and will be making it again.
