Apple Pie Pockets
- 2 Tbs. unsalted butter, plus melted butter for
- 2 apples, peeled, cored and diced
- 2 Tbs. sugar
- 1/4 tsp. ground cinnamon, plus more for
- 4 slices white or cinnamon-raisin bread
In a braiser over medium-high heat, melt the 2 Tbs. butter. Add the apples, sugar and the 1/4 tsp. cinnamon and sauté until the apples are tender, 5 to 7 minutes. Remove from the heat.
Preheat a sandwich grill to medium-high according to the manufacturer's instructions.
Brush the tops of the bread slices with melted butter and sprinkle with cinnamon. Turn 2 of the slices over and top each with half of the apple mixture. Top each with another bread slice, buttered side up.
Place the sandwiches on the preheated grill and close the lid. Cook until the bread is crisp and golden brown, 3 to 4 minutes.
Transfer the sandwiches to a cutting board and cut each in half diagonally. Serve immediately. Serves 2.
