Shrimp Skewers with Caribbean Mango Chile Sauce

Thanks to our mango chile sauce, it’s a snap to prepare these Caribbean-inspired shrimp. The tropical blend combines sweet, ripe mango and pineapple with a medley of island spices, plus red chiles and jalapeños for a lively kick. Just skewer the shrimp and brush with the sauce, then cook on a stovetop grill pan or an outdoor grill. To streamline prep, you can purchase shrimp that have already been peeled and deveined.

Ingredients:

  • 2 lb. (1 kg) jumbo shrimp, peeled and deveined, with tails intact
  • Kosher salt and freshly ground pepper
  • 1/2 cup (4 fl. oz./125 ml) Caribbean Mango Chile BBQ Grilling Sauce
  • Canola oil for brushing
  • Fresh flat-leaf parsley sprigs for garnish
  • Lime halves for garnish

Directions:

Thread 3 shrimp onto each skewer and place in a large baking dish. Season with salt and pepper. Brush the shrimp on both sides with the mango chile sauce.

Preheat a stovetop grill pan over medium-high heat. Lightly brush the pan with oil.

Working in batches, place the skewers on the grill pan and cook, turning once, until the shrimp are pink and opaque, 2 to 3 minutes per side.

Transfer the skewers to a warmed platter. Garnish with parsley sprigs and lime halves and serve immediately. Serves 4.
