Chicken Drumettes with Thai Peanut Ginger Sauce

Whether served as a finger-licking appetizer or as a main course with a side of steamed rice, these chicken drumettes are sure to satisfy. They get a boost of flavor from our savory-sweet Thai grilling sauce, which includes roasted peanuts, tangy lemon and fragrant ginger and spices. Red chile peppers lend a touch of spicy heat. Keep in mind that the chicken needs to marinate for at least 15 minutes or up to 2 hours before cooking.

Ingredients:

  • 2 lb. (1 kg) chicken drumettes
  • Kosher salt and freshly ground pepper
  • 3/4 cup (6 fl. oz./185 ml) Thai Peanut Ginger BBQ Grilling Sauce
  • Canola oil for brushing
  • 2 Tbs. toasted peanuts, crushed
  • Fresh mint leaves for garnish
  • Lime halves for garnish

Directions:

Place the chicken drumettes in a large bowl. Add 1/2 cup (4 fl. oz./125 ml) of the peanut ginger sauce and toss to coat. Cover and refrigerate for at least 15 minutes or up to 2 hours, tossing the drumettes a few times in the marinade.

Preheat a stovetop grill pan over medium-high heat. Lightly brush the pan with oil.

Remove the drumettes from the marinade and place them on the grill pan. Cook, turning once, until the chicken is opaque throughout and an instant-read thermometer inserted into the thickest part of the meat registers 165°F (74°C), 12 to 14 minutes total.

Transfer the drumettes to a warmed platter and brush the tops with the remaining 1/4 cup (2 fl. oz./60 ml) peanut ginger sauce. Garnish with the peanuts, mint leaves and lime halves and serve immediately. Serves 4.
