Baked sausages feed a crowd with minimum effort. To ensure they cook evenly, elevate them on the rack of a broiler pan, and allow any excess fat to drip down into the pan, or outfit a roasting pan or baking pan with a rack. These sausages are the perfect brunch dish to serve alongside a cheesy mushroom frittata or Dutch baby pancake with fresh fruit.

Ingredients:

  • 18 to 24 breakfast sausage links, 1 1/2 to 2 lb. total weight

Directions:

Preheat an oven to 400°F.

Place the sausages on a rack in a shallow roasting pan or broiler pan. Roast until the sausages are shiny but not yet browned, about 10 minutes. Turn the sausages over and continue roasting until cooked through, about 5 minutes more.

Preheat a broiler. Place the pan under the broiler and broil the sausages, turning once, until browned, 2 to 3 minutes per side. Transfer to a warmed platter and serve hot. Serves 6.

Rated 4 out of 5 by from Great alternative to frying Of course there’s nothing like sausage in a frying pan, but if you don’t want to smoke up your house or smell like sausage, this is a good alternative. The broiling browned the sausage beautifully. I will definitely use this method from now on.

Rated 5 out of 5 by from Works perfectly every time You don't have to babysit the skillet and keep flipping for even cooking. Drop them in the oven, set your timer, and work on the rest of your meal.

Rated 2 out of 5 by from Cook Time listed is misleading. When cooked by instructions given the total cook time is more like 17 to 18 mins. Sausage came out good but not as good as frying in a skillet so if you don't have more than a package to cook, it will take just as long in a hot skillet as in the oven.
