Award-winning bartender and cofounder of Crafthouse Cocktails, Charles Joly explains that this drink was inspired by the popular Sbagliato cocktail, which is said to have been created when an Italian bartender accidentally made a Negroni with sparkling wine instead of gin. (Sbagliato means “wrong” or “mistaken,” while apposta means “on purpose.”) In this case the bubbles are provided by San Pellegrino Pompelmo, a grapefruit soda that has a touch of bitterness to balance its sweetness.

Ingredients:

  • 1 1/2 oz. (45 ml) Tanqueray No. Ten gin
  • 3/4 oz. (20 ml) Aperol
  • 3/4 oz. (20 ml) sweet vermouth, preferably Punt e Mes or Cocchi di Torino
  • 1/4 oz. (7 ml) fresh lemon juice
  • Splash of San Pellegrino Pompelmo
  • Grapefruit twist for garnish
  • Fresh thyme sprig for garnish

Directions:

In a cocktail shaker filled with ice, combine the gin, Aperol, sweet vermouth and lemon juice. Shake briefly. Gently add the San Pellegrino Pompelmo to the shaker. Strain into a 10- to 12-oz. collins glass filled with fresh ice. Tie the grapefruit twist in a knot around the thyme sprig and use it garnish the drink. Makes 1 drink.
