Instant Pot French Short Rib Starter Sauce

For the ultimate French short ribs, our Test Kitchen chefs used our customers' favorite recipes to develop a savory, time-saving starter that helps make the most of the Instant Pot. Slow-simmered in small kettles, this savory sauce combines porcini mushrooms and red wine with sweet onions, carrots and Dijon mustard. Simply brown some beef short ribs in the Instant Pot, then add this starter. In less than an hour, you can enjoy a delicious, tender meal.

French Short Ribs Recipe
4 lb. (2 kg) bone-in-beef short ribs
Kosher salt and freshly ground pepper
2 Tbs. vegetable oil
1 jar short rib starter
Season the short ribs with salt and pepper. In an Instant Pot, set to Saute, warm the oil. In batches, sear the short ribs, turning occasionally, until browned all over, about 8 minutes per batch. Turn the Instant Pot off for 5 minutes to let cool. Return all the short ribs to the pot and pour the starter over them but do not stir. Lock the lid in place, seal and set to cook at high pressure for 55 minutes. When pressure cooking is complete, let the pressure release naturally for 10 minutes, then quick release the remaining steam. Carefully remove the lid. Skim fat off the sauce, then set to saute for 5 minutes. Cook, stirring once halfway through, for 5 minutes; the sauce will thicken slightly. Serve.
