Pineapple-Mint Ice Pops

Enjoy a taste of the tropics with these cooling pops. Sample the fruit juice before you freeze it; if it’s a little on the tart side, stir in a small amount of agave syrup to boost the sweetness.

Ingredients:

  • Leaves from 5 fresh mint sprigs
  • 1 pineapple, top removed, peeled and cut into spears (do not core)

Directions:

Juice the mint and pineapple in an electric juicer according to the manufacturer’s instructions. Stir the juice with a spoon. Working in batches, pour the juice into the wells of an ice pop mold and freeze according to the manufacturer’s instructions. Makes 8 pops.
