Maple-Almond Granola with Seasonal Fruit

This crunchy granola, lightly sweetened with honey and flavorful grade-B maple syrup, is very versatile: you can stir in almost any type of fresh or dried fruit (such as currants or cranberries) once the granola is cool. Enjoy it out of hand as a snack, sprinkle over yogurt or serve in a bowl with milk.

Ingredients:

  • 1/4 cup canola oil 
  • 1/2 cup grade B maple syrup 
  • 1/4 cup honey 
  • 1/4 tsp. salt 
  • 4 cups rolled oats 
  • 1 cup coarsely chopped almonds 
  • Fresh or dried fruit for serving 

Directions:

Preheat an oven to 325°F. Lightly oil a 12-by-15-inch baking pan.

In a large bowl, whisk together the oil, syrup, honey and salt. Stir in the oats and almonds, mixing to coat them completely. Spread the mixture evenly in the prepared pan and bake, stirring every 10 minutes, until golden brown, 30 to 35 minutes. Let the granola cool completely.

Store the granola in an airtight container at room temperature for up to 2 weeks. Top with fruit to serve. Serves 10.
