Grilled New Potatoes with Red Onions

Using our high-heat nonstick mesh grill pans, you can transform your patio or backyard into the ultimate outdoor kitchen. Here, the fire of the grill imparts a pleasantly smoky flavor to new potatoes and red onion, dressed simply with a dollop of whole-grain mustard. They make the perfect accompaniment to grilled burgers and steaks.

Ingredients:

  • 1 lb. (500 g) new potatoes, halved lengthwise
  • 1 red onion, quartered
  • 1 Tbs. extra-virgin olive oil
  • Kosher salt and freshly ground pepper
  • 1 Tbs. whole-grain mustard
  • 1 Tbs. chopped fresh flat-leaf parsley

Directions:

Prepare a medium-hot fire in a grill. Put a steel mesh fry pan on the grill, close the grill and preheat the pan for 10 minutes.

In a bowl, combine the potatoes and onion. Drizzle with the olive oil, season with salt and pepper, and toss to coat.

Transfer the potatoes and onion to the grill pan, close the grill and cook, stirring occasionally, for 10 minutes. Return the potatoes and onions to the bowl, add the mustard and toss to coat. Return the potatoes and onion to the pan and continue cooking until the potatoes are easily pierced with a small knife, 5 to 10 minutes longer. Transfer to a serving bowl and season with salt and pepper. Garnish with the parsley and serve warm or at room temperature. Serves 4.
