Drizzle this warm syrup over waffles or pancakes for an incomparable morning treat.
Ingredients:
- 2 cups fresh blueberries
- 5 Tbs. sugar
- Zest of 1/2 lemon
- 1 Tbs. cornstarch
- 2 tsp. fresh lemon juice
- Waffles or pancakes for serving
Directions:
In a saucepan over medium-high heat, combine the blueberries, sugar, lemon zest and 1/2 cup water and stir to dissolve the sugar. Bring to a simmer.
In a small bowl, stir together the cornstarch, 1 Tbs. water and the lemon juice. Add to the berries and stir until the syrup is thickened, about 5 minutes. Serve the warm blueberry syrup over waffles or pancakes. Serves 4.

Versatile sauce, a family favorite
wonderful as syrup, but we also use it as a compote with vanilla yogurt. It's fun to make a parfait with layers of yogurt

Just perfect!
From now on no more store bought blueberry syrup! This recipe is now our breakfast favorite together with buttermilk pancakes!
