Here’s a low-fat, low-fuss way to enjoy tender chicken breasts. Baking the chicken takes longer than sautéing or poaching, but it produces more flavorful meat. Cherry tomatoes become even sweeter as they bake, making them a tasty accompaniment to the chicken breasts that cook alongside. If desired, you can omit the tarragon and sage, and top the finished dish with fresh basil and parsley leaves lightly drizzled with olive oil.

Ingredients:

  • 6 1/2 tsp. olive oil
  • 4 boneless, skinless chicken breast halves, each about 5 oz.  
  • 8 oz. cherry or grape tomatoes, halved
  • 1 1/2 tsp. balsamic vinegar
  • 1/2 tsp. sea salt
  • Freshly ground pepper, to taste
  • 1 lemon, cut into 8 thin slices
  • 6 to 8 fresh tarragon sprigs
  • 8 to 10 fresh sage leaves

Directions:

Preheat an oven to 375°F. Lightly grease a baking dish with 2 tsp. of the olive oil.


Place the chicken breasts in the prepared baking dish. Arrange the tomatoes around the chicken. Drizzle the chicken and tomatoes with the vinegar and 2 1/2 tsp. of the olive oil. Sprinkle with the salt and pepper.


Top each chicken breast with 2 lemon slices. Arrange the tarragon sprigs and sage leaves over and around the chicken. Drizzle the remaining 2 tsp. olive oil over the herbs.


Bake until the chicken is opaque throughout, 25 to 30 minutes. Arrange a chicken breast on each of 4 plates, spooning equal amounts of the tomatoes and herbs around each. Drizzle with some pan juices and serve immediately. Serves 4.

Rated 5 out of 5 by from Moist and scumptious I made this with chicken tenderloins and boneless, skinless thighs. My herb garden doesn't have tarragon so I substituted fresh rosemary and used eight leaves of sage. This cooked easily and wonderful! I used more salt than the recipe called for, but other than that and the rosemary substitution, I followed the recipe and was delighted. Since there are only two of us, we have another meal from this. I will be making this again, definitely. BTW, I served it with russet potatoes diced and tossed with salt, pepper, seafood seasoning and olive oil then roasted in the over for ten minutes longer than I cooked the chicken. Perfect!

Rated 5 out of 5 by from Delicious, fast and easy Made as written for midweek dinner guests. Fantastic! Prepped ahead and set aside to bake later. Was worried that without added liquid it would be dry and bland. Wrong! Flavorful and moist. Dish looked beautiful, too. Chicken does come out pale looking, not browned on top, but since you serve with the lemon slices and tomatoes it doesn't matter. Served with jasmine rice infused with lemon peel and parsley, with garlic green beans. Quick and easy -- a keeper

Rated 5 out of 5 by from Very flavorful This dish is so easy to make, healthy, and the chicken comes out moist & flavorful. My fiance wanted seconds and to know how to make it for next time. You can substitute the herbs with anything you have on hand. I use Italian seasoning and it turns out perfect.

I impressed my husband and myself as well :) I used bone in chicken thighs and cooked it 10 more minutes. It was great. I really like, you only use esy to buy ingredients, nothing fancy. I will definitely make this recipe again!
