Ideal for decorating cookies, royal icing dries quickly and can be tinted with food coloring. You can use the icing to attach decorative candies, colored sugars and small ornaments to the cookies. It's a good idea to flavor the icing with a few drops of vanilla extract or fresh lemon juice.

Ingredients:

  • 3 egg whites, at room temperature
  • 4 1/2 cups confectioners' sugar
  • 1/2 tsp. cream of tartar
  • Pinch of salt
  • A few drops of vanilla extract or fresh
     lemon juice (optional)
  • Food gel (optional)

Directions:

In the bowl of an electric mixer fitted with the flat beater, beat the egg whites, confectioners' sugar, cream of tartar and salt on medium-low speed until blended. Add the vanilla or lemon juice, and food gel, if using. Increase the speed to medium-high, and continue beating until soft peaks form like marshmallow fluff, 3 to 4 minutes. Add water to adjust texture, as desired.

Remove the bowl from the mixer, cover tightly with plastic wrap and store at room temperature until ready to use, up to 6 hours.

Makes 5 to 6 cups.

Rated 5 out of 5 by from Cookiers! Look no further perfect royal icing! Where do I start. In short, I have the recipe I will use from now on. I can't stand the taste of the other RI recipes. I actually was tasting it the entire time I was filling my bags! It went on the cookies great! I kept waiting for bubbles to appear, nope. I then waited for the holes to appear on my dots, nope. I also waiting for the denting. Again, perfect. The salt was the key, and I did add 1 t. lemon juice, 1 t. vanilla and 1 t. almond extract. THANK YOU!

I use it to make gingerbread houses at christmas (of which I make many) and decorating for all occasions. Its very easy and delicious. maintains very well for long periods... My Christmas villages usually last a month and the icing is great. Add a few drops of water to water it down for filling, or leave it stiff for borders, lines or dots. Highly Recommend!

It was very smooth to pipe on (did thin it a little with cold water) and was very quick to dry, allowing customers to take their beautiful gingerbread people home right away.
