It was not the cook or old family recipe that changed, just the pan. Number 2 it really is different than plain triply ala All Clad the whole pan including sides of pan get really hot.The heat transfer is greatly enhanced by the copper layer. This pan is heavy and superbly made. The design is beautiful. The lid is also heavy and tight-fitting to help hold in moisture and flavor while cooking. The pan takes a while to preheat because it is so thick. Be patient. It took mine about 4 minutes to heat before I added the cooking oil. Surprise no. 2 was the way the oil spread out so evenly across the perfectly flat bottom of the pan. There is no warping at all. The food browns quickly and evenly with no hot or cool spots. When I added the sauce to let it simmer and reduce, the simmering bubbles were evenly distributed all across the surface, not just concentrated in the center of the pan over the burner. And the food I cooked in it was tender and delicious. I am genuinely thrilled with this pan and plan to buy more of this line. I highly recommend it.Date published: 2016-08-26
