- Always use caution when handling sharp objects.
- Avoid cutting on hard surfaces such as stone, metal or glass.
- It is not advisable to use any knife but a meat cleaver to cut through bone, as other blades can be easily damaged.
- Hand-wash with warm water and a mild detergent; rinse and dry immediately.
- Avoid cleaners containing bleach or citrus extracts.
- Sharpen as needed. With regular use and honing once a week, you should not need to sharpen your knife more than once or twice a year.
- Sharpen your knife at home using a whetstone or knife sharpener designed to sharpen at a 16-degree angle, or have it sharpened by a professional.
- Store knife in a safe place to protect its edge and prevent injury.

For an additional charge of $26 per address, we can expedite delivery to most destinations. This service is not available for some oversize items, items shipped directly from the supplier (including perishable and custom-manufactured items), out-of-stock items and items to be shipped outside the contiguous 48 states.
Orders received by 9:00 p.m., Eastern time, Monday through Thursday will arrive the next business day; orders placed Friday through Sunday will arrive on the following Tuesday.

If within 30 days, you are dissatisfied for any reason, you may return your purchase for a refund of the merchandise value. An original receipt or gift receipt is required for all returns and exchanges. Returns with a gift receipt will be refunded in the form of a Merchandise Credit for the amount indicated on the gift receipt. Returns with original receipt will be refunded in the original form of payment, cash and check refunds over $100 will be issued as a company check (may take 14 business days from time of request).

We cannot accept returns on monogrammed, personalized, special-order items, custom upholstery, food, items shipped direct from the vendor, or on items damaged through normal wear and tear. Final sale items ending in .97 or .99 cannot be returned.

I knew this knife would be quality based on my previous Shun purchases, and my love for SG2 steel. What forced my hand to buy this was the profile. Tall for a 6" and great tip shape. This thing reminds me of a santoku with a point. Needles to say this thing is a beast. You can put an insane edge on it and it will hold that edge for a while. I have Hikaris and Kajis that are home only because of the finish. The finish on the Fuji is more user friendly for lack of a better description, so much so that I've used it as my daily driver for the last few weeks in a commercial kitchen. It goes through anything I put it to with ease and is a pleasure to chiffonade just about anything. The handle is a great feel, I'm particular to the D shape but this may be my new favorite. Really a very secure feeling grip. This lives up to the hype. WS was great in setting up a replacement product shipment and arranged for the damaged product to be returned. The very first thing I tried was wafer thin tomato slices and I was amused to see that even some seeds were sliced in two. The only detraction would be the monogram. There should be a choice of fonts and perhaps an animation to see what the finished product will look like. I did a side-by-side comparison with my 10-year-old Henckels chef and santoku knives (sharpened somewhat haphazardly by me over the years), cutting carrots, potatoes, shallots, tomatoes, and chicken.
