- More about Mauviel
In 1830, Ernest Mauviel established his namesake cookware company in Villedieu-les-Poêles in Normandy. The village had a long history of outstanding metalwork; the locals were considered experts in the craft. Today, much of the manufacturing is still done by hand using traditional processes passed down through generations of copper makers. True to France’s rich culinary history, Mauviel 1830 is a favorite in professional kitchens, where copper’s quick, even heat conductivity is essential for making delicate sauces and other French classics. Mauviel now also offers stainless-steel collections crafted with the same attention to detail as its traditional copper cookware.

Rated 1 out of 5 by bb9201 from Inaccurate size description - still I thought with how old some of the review are regarding the actual size of this pan, WS would have corrected it by now. They haven't! Very frustrating!Date published: 2019-08-15Rated 5 out of 5 by cmcinc from Love this Jam Pan~! This is a smaller jam pan but it is fantastic. Exactly what I was looking for. I make about 3 lbs of grapes at a time in it but you probably could add more. I like to make small batches. It makes perfect jam and clean up is ever so easy.Date published: 2018-07-03Rated 5 out of 5 by Home Cook from GREAT for Small Batch Preserves! WS's mistake was not clarifying this is a jam pan for small batches. Gorgeous hard-to-find stainless jam pan perfect for summer farmers market season for small batch jams, jellies, preserves. Small batch preserving is so fun! This is identical to the fine Mauviel large jam pans except smaller; the dimensions are about 91/2" diameter (inner rim to inner rim) and 3 3/4" high, holds about four quarts filled to the rim (just filled mine with water) and weighed 3 lbs 2 oz (empty). This size will prepare fruit to fill about 4 or 5 eight oz / half pint jars. In this jam pan, to boil fruit / liquid in pan at about 2"-3" as usual in preserving would equal about a quart or so of fruit / liquid. You could fill it with more, maybe double, but boiling at 2"-3" deep is usual. Great find for those of us who don't want to spend the time to prepare large quantities of fruit for large batches!. Great buy! Buying a second for a gift. .Also great for cooks with tiny urban apt kitchens or cabins.Date published: 2018-05-29
