- Medium cooktop heat recommended.
- Can be used on induction cooktops with Mauviel's induction stove top interface disc (available separately).
- Allow pan to cool before washing.
- Hand-wash; dry immediately with a soft cloth.
- Avoid using steel wool, steel scouring pads or harsh detergents.
- Copper will develop a rich patina over time. This will not affect the pan's cooking performance. To keep the exterior looking new, use a copper polish or a combination of lemon and salt.

For an additional charge of $26 per address, we can expedite delivery to most destinations. Orders received by 9:00 p.m. ET Monday through Thursday will arrive the next business day; orders placed Friday through Sunday will arrive on the following Tuesday.

Rated 3 out of 5 by JimmyJet from Great, thick copper - but just not practical... I over researched this by looking all over the web for the best 12” fry pan and found a couple of sites that did thermal imaging, and this pan always had the most evenly distributed heat, and of course, all the other wonderful properties of copper, but... these copper pieces are even heavier than my Le Crueset! And I work out! The real issue is not so much the unbelieveable weight of this thick copper, but the very impractical and virtually unuseable handles. They are not wide nor thick enough. The big sauce pan is impossible to poor from using the handle - it requires another hand on the pot itself with a pot holder. How do I say this... the thick copper IS the best conductor of heat and has the best evenly distributed properties as well as the best reaction times, but without the proper handles to control these pots and pans, with their excessive weight, is like being presented with a top of the line BMW but with a steering wheel from a child’s pedal car - you really can’t use it nor control it properly. In all honesty, even though my wife and I are gourmet cooks, whenever I peek my head into the kitchens of high end restaurants, they’re using stacks of old beat up, thick aluminum pans sitting on a low flame ready to go for the next order. The skill is in the chef’s hands - not the pan he uses. I’ve never seen copper pans being used in any restaurant. If I had to do it all over again, I would not buy these and see my folly in going overboard in a moment of being OCD about getting even heat distribution. Think very carefully here before you purchase - chances are, like me, you do not really need these and will soon come to the conclusion they are a huge waste of money, but mostly, they are impractical for real cooking.Date published: 2018-12-26Rated 5 out of 5 by Hortencia from What a beautiful set!!! Is this set compatible with an induction range?Hi FeliciaH, This copper cookware on its own is not induction compatible. However, if you use their Interface Induction Disk, it makes copper and aluminum cookware safe to use on an induction range.
