Now with the Instant Pot Max I can use all my recipes without worrying about cooking time difference between 15 psi and lower pressures. I also have been using it as a slow cooker and for sous vide. It's extremely versatile and makes pressure cooking as automatic as you can get! I just wish they made an 8 qt. model with 15 psi. I'd be first in line for one!

I mostly use the high pressure function, but of course have used the saute, various pressure release functions, temperature control settings, and keep warm function, as well as the sous vide function. I LOVE THE touch free PRESSURE RELEASE SYSTEM! Worth the upgrade! I rated the instant pot max with 3 stars, as I would like to control the saute heat setting with more than low and high. The sous vide is not accurate or does not work, even on a replacement instant pot max. After setting up the sous vide (calibration for altitude, etc.), I tested the replacement by setting the sous vide 140 deg. F, like for meat. The pot maintained the water at about 110 deg. F. To maintain the water at 140 deg. F. I had incrementally raised the temp. control setting. to about 165 deg. F. Hours! The max. sous vide temp. setting is 195 deg. F. which would be a good temp. for some vegetable sous vide, but water temp. reached only and sustained at about 165 deg. F. Could monitor closely with a thermometer for meat sous vide at higher temp. setting and buy the instant pot sous vide stick that fits on this pot to obtain the higher sous vide temperature. (As I wanted to do sous vide, I bought an anova sous vide stick but it does not fit the instant pot.) I called instant pot customer service today. Waiting for response. Don't know how they could resolve without replacing, the replacement. Is there a way to recalibrate the instant pot to achieve higher water temperatures, so it can actually heat to 195 deg. F for sous vide? If so, would it also increase the temp. on the saute function? I still have more pressure cooking dishes to try and perfect. My husband wanted the max, as it had the higher pressure setting for pressure canning, but haven't "tested" this yet either. Not sure if I'd recommend to anyone yet, unless they love the pressure release system.

Yes, the max has touch pad and lots of features, but the BURN NOTICE problem is WAY more a problem with the Max. I get this notice more than I don't. I finally am giving up and going to trash it (I won't give it to someone because I don't want them to think the IP brand is all bad) and buying the IP Duo 6 qt.

I grew up using an old aluminum style and actually was very comfortable using one. This thing just makes life easy.. I use a crock pot a lot and trying to get away from 6 to 8 hour cooks. I used my 8hr crock pot recipe on MAX setting, just added a little more liquid and 10 minutes later had a chili I could not tell the difference from old cook to Instant pot SUCCESS

This machine is a lifesaver during the week, cooking frozen chicken breasts and hamburger in a fraction of the time it would take to thaw them, then cook traditionally. I am super picky about meat texture, and this machine cooks all meats to tender perfection. Tri-tip roasts and pulled pork are both delicious. We love jasmine rice in the Instant Pot, although we have two other rice cookers. It turns out sticky and delicious, like our favorite Chinese restaurant. We are LOVING the W-S starters and sauces, too! I found the learning curve to be minimal, but you do need to read the enclosed material and/or watch a good start-up video before using it.

    Rated 5 out of 5 by from Best Tool In The Kitchen I use my Instant Pot Max for so many things. I am a single father and want to produce quality food for myself, my daughter, and loved ones. I make pea soup in 30 minutes, chicken soup in 25 minutes, lemon pepper rotisserie chicken in 20, and yogurt while I am sleeping. I make brown rice in 10 minutes. I slow cooked beef short ribs that were so delicious my family thought I was a genius. There is nothing this item can't do. I use to have an old-fashion pressure cooker and I avoided buying this because of my experience with that. This is a sophisticated machine that is so easy to use and SAFE that I would allow young children to work with it. The steam release valve is safe and easy to operate. It is a wonderful product and you will think so guaranteed. I thought I wanted an 8 Qt but I realize the 6 Qt is just fine. There are no cons to this device. It helps me make delicious, nutritious food fast and consistent.

I took the time and read through all the information provided a couple of times to make sure I was operating this new-to-me device properly. I've cooked all sorts of meals with it! I caught on to it pretty quick, with loads practice, having fun cooking everything from pork roast, beef roast, ribs, ground beef, 1/4 hamburger patties, spaghetti & meatballs, chicken, eggs, all kinds of vegetables, stews, chili, etc... The options for what you can cook is endless. It makes my weekday meal planning so much easier - and so much faster! Food tastes delicious, full of flavor and never dry. This thing has literally changed my life! THANK YOU INSTANT POT MAX! :)

  • Why doesn’t the max have preset buttons? I’m considering the max for its sous vide and canning capability but like the ease of just pushing a button for Chili or hard boiled eggs. I’m assuming the Max does it all is there more of a learning curve?

    Hi Linda, Max doesn’t have the additional pre-set buttons because of the user interface of the new LCD touch screen on the unit. Short answer is – you do a little more than just press the button, but the customization is what really sets Max apart from the rest of the models (aside from EVO now, which is fully customizable as well as far as programs go). For the foods you've listed, they can still be cooked using the Pressure Cook program. Here are the steps: 1 - Push pressure cook and set the time to the desired length for whichever food you’re cooking (Egg, Chili, etc.) 2 – Select your pressure by touching the screen on the pressure section to toggle between low, high, or max (unique for Max… I would keep it on high normally) 3 – Program your steam release by touching the screen under venting to toggle between natural release, pulse release, or quick release. You can also change this at any point during the cycle… so with eggs for example you do a natural release for a few minutes and then change it to quick release after a time. 4 – Press start

    I like the sterilize button on some of the 6 qt models, but this one doesn't have that. I assume it's still possible to sterilize jars in the Max before canning?

    Hi RunBikeSwim, Yes, you can sterilize jars in the Instant Pot Max following these instructions: Wash the jars and rinse thoroughly. Ensure there are no cracks or imperfections in the jars or lids. Place the inner pot into the cooker base, then place the steam rack on the bottom of the inner pot. Place the jars on the steam rack. The pressure cooker will hold up to 4 x 16 oz. (500 mL) jars. Fill the inner pot with 3 cups (750mL / 24oz) of warm water. Place the lid on the cooker base and turn it clockwise to close it. Connect the power cord to a 120V outlet. The cooker will enter standby mode. Select Canning. Touch the ‘Minute’ field to select it, then turn the central dial to adjust the time to 10 minutes. Ensure that the ‘Hour’ field displays ‘00’, otherwise touch the ‘Hour’ field and turn the central dial until the display shows ‘00’. The display will read 00:10. Touch the Pressure field to toggle between Low and Max pressure. Select Low Pressure. The display will read “Low”. Touch the Venting field to toggle between the venting options, and select QR. Touch Start to begin. The pressure cooker will beep 3 times.

    For Sous Vide cooking, the 6 quart size seems a little small. Could the Max handle cooking a 3 pound pot roast Sous Vide style? What quantity of food can be cooked?

    Hi Kathy B, The term “Sous Vide” is French for ‘Under Vacuum’ and refers to the process of vacuum sealing food, bringing it to a very precise temperature, and maintaining that temperature for a period of time to achieve high quality, consistently delicious results. Sous Vide offers a customizable setting which allows you to choose a precise cooking temperature from a range of 25°C ~ 90°C / 77°F ~ 194°F, ideal for Sous Vide cooking. Steps to Sous Vide Fill the inner pot ⅔ full of water for optimal temperature control. Insert the inner pot into the cooker base, then place the lid on the cooker base and turn it clockwise to close it. Connect the power cord to a 120V outlet. The cooker will enter standby mode. Select Sous Vide. Touch the ‘Hour’ field to select it, then turn the central dial to adjust the time to desired hour value. Repeat the process to adjust the ‘Minute’ field. Touch the Temperature field and use the central dial to increase or decrease the temperature. Touch Start to begin. The pressure cooker will beep 3 times. While the pressure cooker heats, season your food as desired, then place the ingredients into airtight pouches. Separate single servings of food within individual pouches. Remove air from the pouches and seal tightly. Once the set water temperature has been reached the pressure cooker will beep. Open the lid and immerse the sealed pouches into the inner pot. The contents of the pouches should be submerged below the water level. Place the lid on the cooker base and turn clockwise to close. For long cooking times, check periodically to make sure the water level remains above the sealed pouches. If you need to add water, heat it to approximately the same temperature as the water in the container to avoid cooling the water. Once the Cook cycle has completed, use the Sauté Smart Program, a pan, browning torch, or barbecue to sear meat to your preference. For beef, tender cuts of beef should be cut to ½”- 2” thick (1½“- 2½” thick for tougher cuts) in order to be placed into a vacuum-sealed bag for cooking. Ensure that the inner pot is always 3/4 full of water, and that the food within the air-tight cooking pouches is completely submerged. Use the lid to help prevent rapid evaporation.

    Does the spring foam fit inside the max?  I believe the spring foam is 8” diameter.  There are no measurements for inner pot on the max.

    What is the difference in the max than the ultra ? And which one is the newest addition ?

    Hi Tammy, The Max has the highest level of PSI of any Instant Pot at 15 psi, which makes it hotter and faster for cooking. The Max also has additional functions for Sous Vide and Canning. The Ultra is not sold at WS but includes functions not on the Max including Bean/Chili, Meat/Stew, Multigrain, Porridge, Soup/Broth, Cake, Steam, Egg, and Ultra. Both have automated steam release functions. The Max is the newest model from Instant Pot.

    Is this 6qt big enough to feed a family of 4 which includes my mom, myself, my 16 yr old 6'4 brother who is an athlete and my husband who is also over 6ft and athlete? The boys alone, eat 2 servings or more at dinner.

    Hi jpott29, The most important consideration in determining which size you need is that with pressure cooking, you can only add food to 2/3 full. So the pressure cooking capacity is actually a good deal smaller than the actual size of the pot. The second most important consideration in determining size is cook time. With pressure cooking, all models will cook the food in the same amount of time, but the larger the model, the longer it will take to reach pressure and also to release pressure, though it’s not a terribly long time. A 6 quart should be sufficient but if, on occasion, you'd like to batch cook for freezing or serve a large group of people, we would recommend the 8 quart.
