Rated 5 out of 5 by fishgirl from The Coolest (W/ Caveat re the directions/recipes) I have used this product all summer in conjunction with some mini mason jars that I also bought from W-S (but that brand no longer available on W-S as of checking today to review those, too). The best part about this machine is that you don't have to babysit it until you are ready to jar it and put it into your fridge. The heating to cooling feature is awesome. A friend walked into my kitchen while I was making and decided to order one on the spot because of the cooling feature (she was an old hand doing yogurt making with strainers etc old fashioned way before machines). I am a yogurt making newbie and I found the instructions for making yogurt very confusing with too many options. I personally find that I want a thick consistency and plain traditional flavor; this way I can add a spoon of jam or some real fruit or veggies (for riata) or some vanilla flavoring at point of eating instead of cooking--- Keep It Simple Stupid method is what I call it After several trial and errors for a basic yogurt as I described just now, this is what I found works best. Maybe it will help some others who are just looking to get up and running fast with this cool machine: Have the following handy in readiness: Your Cuisinart, a large mixing bowl that is anything other than stainless steel (do not use any stainless steel or metal in making or stirring the yogurt cultures), a large enough pot to heat a quart of milk maybe a little extra, your culture, a food thermometer (I'm using a regular meat thermometer). I found using simple pasteurized whole milk that is NOT ULTRA pasteurized or processed gives me the best results. I found using "Culture for Life Real Yogurt Culture" single batch cultures with a new packet every single time gives me consistent results and I don't have to play around with saving starters from previous batches etc. (KISS Method again) So my recipe is take a quart or slightly more of whole milk and heat it up in a pot on your range (takes about 15 minutes to reach 180 degrees) checking the temperature with thermometer. Once it reaches 180 degrees I turn off the range but I leave the milk in the pot for about 5 minutes because I have found the longer you leave it at 180 before trying to cool it down, the thicker consistency your yogurt will be (I like it thick). After that I pour the heated milk into the large mixing bowl and place it on my stone countertop so that it will cool down to 115 degrees fast (about 15 minutes or so). When it hits 115 degrees I then take one packet of my culture and mix it into the milk with the plastic long handled spoon that comes with Cuisinart maker. Then I transfer the mixture into the Cuisinart container, put the lid on it, put the outer lid on it, and plug in the machine. The machine is set to 8 hrs which blinks on and off. Push the Start Button. After 8 hours it will automatically switch to "C" for Cool. Leave it undisturbed for at least 6 more hours (I don't think there's a limit as to how long so you can leave it overnight, go to work, etc but do cool it in the Cuisinart a minimum of 6 hrs). Then you need to put it into jars or containers for your fridge. NOTE: I did not see any mention in the instructions that you should STERILIZE your jars and lids before putting yogurt in them. I found out the hard way that after a few uses, just dish washing the glass mini mason jars and lids by machine or hand is not enough to keep them from turning your yogurt moldy. You MUST sterilize your containers every batch. It would be nice if this info was available with the Cuisinart. Since it's not, here's what I did: Boil water and cover the jars and lids completely in it for 5 minutes minimum. Jars will be hot when you remove them-- be careful to remove them with a sterilized tongs so you don't add new bacteria from your hands or your utensils. The containers need to be dry when you add the cooled yogurt to them. Dry with paper towel or air dry them on your countertop on top of a paper towel. Be careful when handling them and use the long plastic spoon to scoop yogurt from Cuisinart into your jars. Wipe down any side spills and put the sterilized lids on. Put in your fridge. Let them "set" a couple of hours before eating. This yogurt recipe is thick and tangy and makes six 8 oz jars of plain yogurt. I found the directions confusing because they give you too many either / or options (ie: either this milk or that milk or vegan or blah blah blah. You have to sort out everything and try and see what happens which is not the way to get consistent results each time so it wasted my time and effort and costly ingredients). Just go basic and you can't go wrong by adjusting flavor at point of eating it. IE: I find just one even teaspoon of Divina sour cherry preserves swirled into one jar is my favorite. For a quick Indian Riata: 8 oz of the basic yogurt above 1/2 cup diced seedless cucumbers 1 seeded green chile run through a mini-prep processor Pinch of cumin plus salt & pepper to taste (Mix all together and serve immediately with your main dish). It's easy and delicious! I just mix 4 oz. (weight) of my last batch with milk, cover with the outer, not inner, cover and let the machine go for 13 hours. No need to preheat the milk. I usually dry the condensation from the lid, once or twice during cooking. There will be a lot! If I forget to turn the machine off, it starts to cool automatically. Need a starter to get started? My favorite so far is coconut milk yogurt. All I do is add a little agar or tapioca powder to thicken the yogurt. It turns out great. I have also used whole milk, super easy, no thickeners for that. But each batch I made with the Dash didn't turn out like I wanted. I have made two batches so far and the batches came out nice and thick. I followed the directions in the manual - used whole milk, heated to 180 degrees and added 6 oz. of plain yogurt at 110 degree... It turned out perfect. Lesson learn...
