Slow Cooker Lasagna Recipe

Feed a crowd with this flavor-packed lasagna, which cooks to bubbling perfection in a slow cooker. If you’re lucky, you’ll have leftovers to enjoy for lunch the next day.

 

Ingredients:

  • 1 Tbs. olive oil 
  • 2 lb. Italian sausage, casings removed  
  • 2 jars (each 24 oz.) tomato sauce 
  • 2 cups water 
  • 1 lb. whole-milk ricotta cheese 
  • 2 Tbs. chopped fresh flat-leaf parsley 
  • Kosher salt and freshly ground pepper, to taste 
  • 18 ruffle-edged lasagna noodles (not no-boil noodles) 
  • 1 1/2 lb. mozzarella cheese, grated 
  • 2 oz. Parmigiano-Reggiano cheese, finely grated  
  • Thinly sliced fresh basil for garnish 

Directions:

 

In the stovetop-safe insert of slow cooker over medium heat, warm the olive oil. Add the sausage and cook, breaking up any large chunks with a wooden spoon, until the meat is browned, 10 to 12 minutes. Add the tomato sauce and water and bring to a simmer. Transfer the sauce to a large bowl.

In another bowl, stir together the ricotta, parsley, salt and pepper. Set aside.

Spread a thin layer of the sauce on the bottom of the slow-cooker insert. Cover the sauce with a single layer of uncooked lasagna noodles (about 3), breaking the noodles as needed to fit. Spread about 1/3 cup of the ricotta mixture over the noodles. Top with about 2 cups of the sauce, then sprinkle with about 1 cup of the mozzarella and 1/4 cup of the Parmigiano-Reggiano. Repeat the layering 4 more times, starting with the noodles.

Transfer the insert to the slow-cooker base, cover and cook on low according to the manufacturer’s instructions until the noodles are tender and cooked through, about 4 hours.

Position a rack in the center of an oven and preheat to broil.

Transfer the slow-cooker insert to the oven and broil until the cheese is bubbly and golden brown, 6 to 8 minutes. Let the lasagna rest for 20 minutes before serving. Garnish with basil and serve immediately. Serves 12.

My SIL bought this same All-Clad unit 6 years ago and it is still working beautifully, holding up like a work horse for her young family (6 kids). My CP slow cooker broke within a year, only cooking on High -- Low and Warm for weren't registering any longer. I absolutely love being able to use the insert to braise on the stove and then immediately transfer it to the slow cooker base without additional mess. The opaque can be a bit of a drawback if being able to peek through a glass cover is a feature important to you. Other than that, I have had no complaints - I use my unit at least 3-4 times a month, and haven't had any issues with the electrics or the insert flaking.

    Rated 3 out of 5 by from Good and not so good.... I purchased this cooker for my wife for Christmas 2015. Each time we have used we have obtained excellent results. We have not experienced the failing liner coating - yet. However, we find the visible appearance of the controls difficult to read. Chrome on chrome creates little to no contrast and leads to clumsiness on setting. The other design deficiency is the non-insulated lid handle. Grab it without a hot-pad and you may be burned. A warning label or symbol on the lid would be helpful.

The remainder of the insert looks brand new and the electronics work great. Unfortunately, the replacement insert cost is making me reconsider investing in this brand twice. I won't throw good money after bad!

    Rated 3 out of 5 by from DOA after 5 years of very light use Our unit stopped working about 5 years after purchase. This was especially painful because our daughter has one of the cheapo type slow cookers and it lasted us more than 10 years before we gave it to her 4 years ago, and she uses it almost daily. Keep in the mind this unit is only guaranteed for 2 years, it's not like All Clad cookware. My advice is to get something much less expensive, they all work the same and with the disposable linings clean up is a breeze with any unit.

If some liquid slides down the front it goes into it and all readings go away until it dries out. There should be a rubber gasket or something to prevent it. Called but I would have had to return it and the same thing would have happened again.

    Rated 5 out of 5 by from Awesome Slow Cooker I have had this cooker for over 7 years - I think it might even be 10. Mine had a ceramic insert which broke, they replaced it, and it broke again, so they sent me this insert you see here. I can tell you I have NEVER been so impressed with All Clads customer service. They took down my info, and immediately sent me a new one. They never questioned me - instead they gave me prompt and friendly service and replaced it without a hitch! I think I received it within a week I want to say. Most companies, after a year or even 6 months, won't do anything for you - but this company is amazing. I love All Clad, but this just makes me want everything All Clad. I love how it cooks, and the size is great for my big family. It has been a well used appliance - I probably use it at least, at least, once a week - all year round.
