- Pumpkin Braised Pork Recipe
In the stovetop-safe insert of a 4-quart (4-l) slow cooker over medium-high heat, warm the oil. Season the pork with salt and pepper. Working in batches, sear the pork until well browned, about 8 minutes per batch. Transfer to a bowl.
Add the onion to the insert and cook, stirring occasionally, until just beginning to soften, about 4 minutes. Return the pork to the insert and add the carrots, red pepper flakes and braising sauce. Cover and cook on high until the pork is tender, about 4 hours, stirring in the kale during the last 30 minutes of cooking. Serve with crusty bread. Serves 6 to 8.

Cast iron insert great for browning and then into base for fool proof sow cooking. Touch a few buttons and walk away until you are ready to eat dinner. All-Clad dependability is a given. Have not noticed any tendency for the insert to hold odors. Timer allows you a start time and then take advantage of the warm feature as long as you have enough liquid so food doesn't dry out. However, the non-stick insert absorbed odors from my first meal--a beef stew with wine--and I cannot get out the smell. I've tried baking soda, trips through the dishwasher, even boiling with baking soda. It was less pronounced after all that. I took a risk and used it twice more -- now I have two more sets of odors. This has to affect the taste of the dish. I am not about to spend hours removing odors after each use. It also won't program for less than 4 hours on low, so it isn't possible to add a couple of hours if the meal isn't quite ready without using a timer. Heck, I can just as easily use my oven if I have to do that. I use this one more often now, because I went from feeding five to feeding 1-2. I use it at least once a month to make a whole chicken - get a smaller one, and it fits fine. But we also use it for chili, shredded chicken meat and more. It's easy to clean and works great. I have had several slow cookers over the years and this All-Clad is by far the best one. Most slow cookers I've owned have practically boiled the food--even on low--which they should not do. Thankfully this one does not. Also, I can sear meat in the insert before putting the insert in the cooker, which helps to add more flavor to the meat. For my husband, the best thing is that is doesn't put out a lot of heat while cooking. We don't like heating up the kitchen in the summer with a cooker.
