- BBQ Chicken Pizza Recipe
Preheat a grill over high heat, keeping the center burner on medium-low to low heat. Lightly brush a steel grill pizza pan with olive oil.
On a lightly floured surface, roll out the pizza dough into a 12-inch round and transfer to the prepared pizza pan. Spread the sauce evenly on the dough, leaving a 1/2-inch border uncovered. Sprinkle with the mozzarella and cheddar cheeses. Top with the chicken and onion.
Place the pizza pan in the center of the grill and cover the grill. Bake until the crust is crisp and well browned and the cheese is melted, 5 to 6 minutes. Transfer the pizza to a cutting board and top with cilantro leaves. Cut into slices and serve immediately. Makes one 12-inch pizza.

I use Trader Joe's refrig. dough and make two pizzas with each 16 oz. You need to experiment, but the Trader crust stayed crispier that mine and it made prep a cinch. Only complaint is that I wish at that I had 2 units for over 4 people. The pizzas are small and take about 4 -5 minutes each for thin crispy pizza. So 2 people can split first pizza but then others have to wait. I cook my sausage, mushrooms and onions before placing on room temp dough and onto the oven. Peppers can be raw. The pizza maker was able to make 15 pizzas in no time and everyone loved the results. I used 00 flour mixed with bread flour, let it rise for 24 hours in the fridge, fresh buffalo mozzarella, can of peeled San Marzano tomatoes with my special touch and it was the best pizza we’ve ever had. The oven heated up in no time. I made the mistake of washing the pizza stone but then placed it in the oven at 350 degrees to dry it out until no steam was present. It’s a delight to be able to make our own thin crust pizza that comes out like we had a pizza oven in our home. No more delivery, or disappointing and costly pizza dinners out. I’ve given this a weeks worth of trying and, after a small learning curve, I LOVE IT. Now, to hopefully help others contemplating this purchase, I want to share some of my own experience. Prior to this, I’ve tried to make pizzas like you get at a pizzeria (the small independent, family owned type... not that greasy fast food type from a Hut or gas station or the like). At home, there was one simple fact. You just don’t get the crispy crust when your oven on reaches certain temps. I got great results with a stone from another company that would tolerate high temps, but just not quite what we wanted. Ladies and gentlemen, this is your device for perfect crispy bottom crust that’s still chewy and amazing. Is it perfect? No- it has its limitations. It’s not a $2000 device, so there are minute limitations. Size, being one. You can’t make a family size 16” Pizza on this- but you CAN make smaller 10-11” pizzas and customize them for your family!! The first time I tried it, it did smoke- “burning off the new.” It was cleared after that first 30 min preheat. If you’re going to use this, before you get started, it would be a good idea to have a pizza peel. I tried a piece of parchment initially and within 30 seconds, it was black and charred. I promptly removed it and had the Pizza baking. It bubbles up too much. I figured out that piercing the crust per the instructions could not be skipped. I had the cheese piled high and the bubble that rose caused the cheese to touch the top element- another limitation, but in no way a dealbreaker. It isn’t designed for a mile high pizza pie. The second time around and several times since, and not having a Pizza peel, I tried a different method. Apply the crust, bake it for 1 min, lift the lid and quickly apply the toppings. It works, but I know I am losing heat this way. until my peel comes (& my semolina and...I have to try 00 flour), this will be my preferred method. Don’t forget to turn your heat to a different setting based on your crust thickness. I left it on preheat and scorched the bottom of one of my pizzas. Oops! Last little bit of advice. This is a tool meant to be used, not looked at In perfect condition on a shelf! One use, and you’re going to start that seasoning process. If you own stoneware, you know what this means. It says to scrape away debris. I have other stoneware, so I figured it could be rinsed. I quickly rinsed it, left it out to air dry about 30 min, then placed it back in the device which I washed out. The next day, I turned it on and it seemed to be smoking again- but the window showed condensation. I dried the machine well, kept it on preheat, and eventually the smoking/ steaming stopped. Lesson learned! It may seem like there are issues- just follow the directions. Get yourself a Pizza peel- that’s a necessity. Would I buy this again- YES. It’s SERIOUSLY good Pizza! My kids like that within 5-6 min with prepped dough, they can have their own customized mini pizzas! So far no issues when it comes to breaking in the stone there is a light odor but it’s not horrible it’s just smells new. I read a bunch of blogs with tips and tricks and that made a huge difference. Do the research! But this machine pumps out fantastic crusts, nicely charred and delicious. We put this machine through a pizza party and it delivered hour after hour. Use a pizza peal and parchment paper and puncture the crust all over. And don't overload with toppings or spread the toppings to the very edge of the crust. This avoids cheese bleeding into the stone and smoking up the house. This delivers comparable to the brick oven style. Total score!Date published: 2018-01-15
