Butter blended with fresh herbs, known as a compound butter, makes a simple but delicious embellishment for grilled rib-eye steaks.

Ingredients
3 Tbs. unsalted butter, at room temperature
2 Tbs. snipped fresh chives
1 Tbs. minced fresh rosemary
Salt and freshly ground pepper, to taste
4 rib-eye steaks, each about 1 inch thick
Directions
Prepare the herb butter In a small dish, stir together the butter, chives, rosemary, and a pinch each of salt and pepper.
Cook the steaks Meanwhile, prepare a hot fire in a grill and oil the grill rack. Or, preheat a broiler.
Season the steaks generously with salt and pepper, patting the seasonings firmly into the meat. Place the steaks on the grill rack, or put them on a baking sheet and place under the broiler. Cook, turning once, 6 to 8 minutes total for medium-rare, or until done to your liking.
Place each steak on a plate, top with the herb butter and serve immediately. Serves 4.

Simple and deliciousThis recipe is so simple and delicious. I don't have a grill or a grill pan so I had to pan fry it. The rib eye steaks were grass fed and about 1/2 inch thick so I cooked them 3 minutes on each side for medium rare. I seasoned them with Maldon salt and freshly ground black pepper. The herb butter just hit it out of the park! They were beyond delicious!

Easy and tastyThis is a really easy, simple, and tasty way to dress up a steak. The herb combination is delicious. I cut back on the amount of butter so I felt a little less guilty eating it.
