In this easy supper, slices of flank steak, bell peppers and onion are roasted together, then tucked inside warm tortillas and topped with mashed avocado and a squeeze of lime juice. And since everything is cooked on a single baking sheet, cleanup is a breeze.

In a large bowl, toss together the steak, bell peppers, onion, garlic, oil, chili powder and salt until evenly coated. Spread the steak and vegetables out on a nonstick baking sheet. Roast, stirring once halfway through, until the steak is cooked through and the vegetables are tender, 12 to 15 minutes.
During the last 5 minutes of cooking, wrap the tortillas in aluminum foil and place in the oven.
Divide the fajita mixture among the warm tortillas and serve with mashed avocado, lime wedges and hot sauce. Serves 4.

Fantastic RecipeThis is now my favorite fajita recipe...and, living in Texas, I have tried quite a few. This is incredibly easy and very tasty! I have made it exactly as written with both beef and chicken...It works great for both.

Simple and delicious! If you use good quality, fresh ingredients, this recipe shouldn't disappoint. The only change I made was to broil everything for just a short time at the end of cooking, so that there would be a bit of a crispy surface to the meat, like you can get in grilling it. I served chopped cilantro along with the avocado and lime. This is ridiculously easy, and would be a wonderful dish to make for an informal gathering.

Very easyMade these for lunch for my family. I did end up using chicken instead of beef, but it was delicious! I put foil on the sheet pan for easy clean-up. Otherwise, the recipe was made exactly as shown.
