Roasted Spiced Black Plums

This recipe works with any type of stone fruits, but plums go particularly well with the exotic flavors of star anise. You could also make these for a brunch, served over pancakes or with hot cereal, or layered in a parfait with nonfat yogurt and granola.

Ingredients:

  • Canola-oil spray as needed
  • 8 ripe black plums, halved and pitted
  • 1 Tbs. firmly packed brown sugar
  • 8 star anise pods
  • Nonfat or low-fat vanilla frozen yogurt for serving

Directions:

Preheat an oven to 400°F (200°C). Select a baking dish just large enough to hold the plum halves in a single layer and lightly coat with the canola-oil spray.

Arrange the plums, cut side up, in the prepared dish. Cut a thin slice off the round side of each half to help them sit flat, if you like. Sprinkle the brown sugar over the plum halves, dividing evenly, then sprinkle the star anise pods evenly over the top. Roast until the sugar has melted, the plums are warmed through and the skins are just beginning to wrinkle a bit on the edges, about 15 minutes. Let cool to warm, or use immediately.

To serve, put scoops of frozen yogurt in dessert bowls and arrange the plum halves on top (discard the star anise). Serve immediately. Serves 4 to 6.
