Preparation Instructions
Ingredients
- 1 1/4 cups (190g) ebelskiver mix
- 2 eggs, separated
- 1 cup (250ml) milk
- 2 Tbs. unsalted butter, plus more for cooking
- 1/2 cup jam, chocolate-hazelnut spread or cooked fruit for filling
- Maple syrup or whipped cream for serving
Directions
- Put the ebelskiver mix in a bowl. In another bowl, lightly whisk the egg yolks, milk and the 2 Tbs. butter. Add the yolk mixture to the ebelskiver mix and stir until well combined.
- Using an electric mixer fitted with the whisk attachment, beat the egg whites on high speed until stiff but not dry peaks form, 1 to 2 minutes. Gently fold the whites into the baller in 2 additions.
- Put 1/4 tsp. butter in each well of an ebelskiver pan. Set over medium heat and heat until the butter begins to bubble. Pour 1 Tbs. batter into each well. Place 1 tsp. jam or other filling in the center of each pancake and top with another 1 Tbs. batter.
- Cook until the bottoms are golden brown, 3 to 4 minutes. Using 2 wooden skewers, turn the pancakes over and continue cooking until golden brown on the second side, about 3 minutes more. Transfer the pancakes to a plate. Repeat with the remaining batter and filling.
- Serve hot with maple syrup or whipped cream.
- Makes about 24 ebelskiver.
