Warm Plums with Honey and Greek Yogurt

When plums reach their peak in summer, try this easy (and healthy) dessert. Choose plums that are ripe but still a bit firm to the touch so they will hold their shape during baking.
Ingredients
- 2 Tbs. honey
- 1 Tbs. light brown sugar
- 1 tsp. vanilla extract
- 6 firm but ripe plums, halved, pitted and cut into 1-inch (2.5-cm) wedges
- 1 Tbs. unsalted butter, cut into pieces
- 2 cups (16 oz./500 g) plain Greek-style yogurt
- 1/4 cup (1 oz./30 g) pistachios, toasted and coarsely chopped
Directions
Preheat an oven to 425°F (220°C).
In a baking dish, stir together the honey, brown sugar and vanilla. Add the plums and toss well with the honey mixture, then dot evenly with the butter. Roast until just warm, 5 to 7 minutes.
Spoon a small amount of plums and a spoonful of juices from the baking dish into each of 4 serving glasses, then add 1/2 cup (4 oz./120 g) yogurt to each. Top with the remaining plums. Sprinkle with the pistachios and serve immediately. Serves 4.
