This simple, rustic dish is both healthy and hearty. Winter kale is first braised with fragrant garlic, green onions and lemon juice. Protein-rich eggs are then nestled into the bed of kale, where they gently simmer to perfection. A finishing garnish of red pepper flakes adds the perfect amount of contrasting heat.

Ingredients
2 Tbs. unsalted butter
4 green onions, white and light green portions, chopped
1/4 tsp. freshly ground black pepper, plus more, to taste
Zest and juice of 1 lemon
4 eggs
Red pepper flakes, to taste
Directions
In a large fry pan over medium-high heat, melt the butter. Add the green onions and garlic and cook, stirring, until fragrant, about 1 minute. Add half of the kale and sauté, stirring frequently until it begins to wilt, about 2 minutes. Stir in the remaining kale and repeat. Add the broth, the 1/2 tsp. salt and the 1/4 tsp. black pepper. Stir in the lemon zest and juice. Simmer, stirring occasionally, until the kale softens, about 6 minutes.
Using the back of a spoon, create a pocket for each egg in the kale. Crack 1 egg into each pocket. Reduce the heat to medium-low and season the eggs with salt and black pepper. Cover the pan and let the eggs cook until almost opaque, 4 to 5 minutes. Turn off the heat and let the eggs rest, covered, until done to your taste. Sprinkle with red pepper flakes and serve immediately. Serves 4.

Elevated breakfastThis simple dish is sooo flavorful; I was shook so I created an account to comment! I followed the recipe but made one adjustment - for the broth I used 2 tsp of chicken bouillon base into 1 cup of water and sprinkled on extra red pepper flakes and paprika at the end.

Marvelous way to incorporate kale into breakfast!We’re always looking for a new way to work veggies into breakfast and this was perfect! I doubled the garlic and finished with fresh Parmesan. Served with toast, this meal is a keeper!

WHOA!! super deliciousso good. so healthy. i had some small yellow onions from your garden (instead of green onions) and also added a little crumbled feta on top, at the end. Used homemade veggie broth. OUTSTANDING dish. Not hard but the few steps and lemon really make this a five-star dish. Will be doing this, often. It is so good, I created an acct here just to leave a review and spread the word!!

SO Good!!I suck at following recipes but this one is very easy and super delicious. I subbed broth for water, and olive oil for butter and it was really flavorful still. My husband reached for the hot sauce and I said “no taste it first!” And he loved it... it doesn’t need anything further than the simple ingredients.

So Good!Super easy to make, no crazy ingredients - I didn't even have to go grocery shopping!
I wanted to eat the entire pan, but one serving is plenty filling. Don't forget to take the lid off at the end or you'll end up will totally cooked eggs, like I did, and they were still great.

Delicious Kale recipe!This is a great recipe! Really enjoyed using kale from our garden and fresh eggs in this hearty and healthy recipe. I was concerned that this recipe called for too much lemon between the zest and the juice, but it was perfect! Can't wait to make it again!

Healthy Impression BreakfastThis is my go-to breakfast for healthy eaters. I don't cook the kale as long as the recipe suggests because I prefer a little more texture to it. The red pepper flakes add a great kick!
