Pomegranate Simmer Sauce Chicken

This hearty dish comes together in a flash thanks to POM Wonderful® Pomegranate Chicken Simmer Sauce, available exclusively at Williams Sonoma. For an easy weeknight meal, we like to serve the chicken with couscous and steamed broccoli, but this dish also pairs well with a crusty loaf of bread and a simple side salad.

Ingredients

  • 1 lb. (500 g), boneless, skinless chicken thighs
  • Kosher salt and freshly ground pepper
  • 1 Tbs. vegetable oil or oil of choice
  • 1 jar POM Wonderful® Pomegranate Chicken Simmer Sauce
  • Cooked rice or couscous for serving (optional)
  • Cooked broccoli for serving (optional)

Directions

Pat the chicken thighs dry with a paper towel and season with salt and pepper.

In a large fry pan over medium heat, warm the oil. Sear chicken thighs without moving them until golden brown, about 5 minutes. When chicken thighs easily release from the pan on their own, flip and cook for an additional 2 minutes.

Add the simmer sauce to the pan and cook, occasionally scraping up any crispy brown bits, for 5 to 10 minutes. The chicken is done when it has reached an internal temperature of 160 to 165°F (71 to 74°C).

Serve with your favorite vegetable and couscous, rice or your go-to grain. Serves 2 to 4.
