Pasta with Roasted Garlic-Tomato Sauce and Basil

Serves 4.
Ingredients
- 2 Tbs. olive oil
- 1/2 yellow onion, chopped
- 1 can (28 oz.) peeled whole tomatoes, seededand diced
- 3 Tbs. roasted garlic paste
- 4 to 6 fresh basil leaves
- Salt and freshly ground pepper, to taste
- 1 lb. pasta, cooked
Directions
In a saucepan over medium heat, warm the olive oil. When the oil is hot but not smoking, add the onion and cook, stirring occasionally, until tender and translucent, 5 to 6 minutes. Add the tomatoes, stir to mix and bring to a simmer. Reduce the heat to medium-low and cook, stirring occasionally, until the sauce thickens slightly, about 20 minutes.Stir in the garlic paste and continue cooking, stirring as needed, 20 to 25 minutes more. Stir in the basil and cook until the leaves are tender and wilted, 2 to 3 minutes more. Season with salt and pepper. Toss the sauce with the pasta and serve immediately.
