Overnight No-Knead Bread with Rosemary

Making bread at home is much easier than you might think, especially when you use a recipe like this one, which requires no kneading and a minimum of hands-on time. Letting the dough rise overnight develops the flavor of the bread, as does the addition of fresh rosemary. If you like, you can substitute thyme, tarragon or another of your favorite herbs for the rosemary.

Ingredients

  • 2 3/4 cups (14 oz./440 g) all-purpose flour
  • 1/4 tsp. active dry yeast
  • 1 1/2 tsp. kosher salt
  • 2 tsp. finely chopped fresh rosemary
  • 1 1/2 cups (12 fl. oz./375 ml) lukewarm water
  • 1 egg white, beaten

Directions

In a large bowl, stir together the flour, yeast, salt and rosemary. Add the water and stir until a shaggy, sticky dough forms. Cover the bowl with plastic wrap and set aside at warm room temperature (about 70°F/21°C) until the surface of the dough is dotted with bubbles, about 12 hours.

Turn the dough out onto a well-floured surface. Using a bench scraper or your hands, turn the dough over on itself a few times and shape into a ball.

Lightly flour the bottom of a 3-quart (3-l) Dutch oven or a no-knead bread pot. Gently transfer the dough to the pot and cover with a towel. Set aside at warm room temperature until doubled in size, about 1 1/2 hours.

Preheat an oven to 425°F (220°C).

Using a pastry brush, brush the top of the dough with the egg white. Cover the pot and transfer to the oven. Bake for 30 minutes, then remove the lid and continue to bake until the top of the bread is golden brown, 10 to 20 minutes longer.

Transfer the pot to a wire rack and let cool for 10 minutes. Turn the bread out onto the rack and let cool completely before serving, at least 1 hour. Makes one 1 1/2-lb. (750-g) loaf. Serves 8.

Rated 4 out of 5 by from Great to do with my 10 year old! We followed the recipe completely. It came out spectacular. It does get stuck to the bottom of the dutch oven but I was able to wiggle it out. I'm pretty sure I dusted the base of the dutch oven with flour prior to putting in the dough. Over all it was an absolute hit with my family!

I read the other reviews first and I wasn’t familiar with the process of pre-heating the Dutch oven so I didn’t. I sprayed non-stick spray on the bottom of my pot and dusted with flour. The bread slid right out after baking...no sticking issues at all! I will DEFINITELY be making this again!

Rated 1 out of 5 by from Disappointing As the previous reviewer stated, no knead bread is usually placed in a preheated Dutch oven. The accompanying photo shows bread that was obviously proved in a banneton, which is not what is called for in the recipe. Without preheating the Dutch oven, the crust of the bread sticks to the surface and makes it impossible to remove. The unnecessary egg white wash further creates “glue” that exacerbates the sticking. This recipe could not have been thoroughly tested before being published. Disappointing.

Rated 5 out of 5 by from Great bread, but... I have made various recipes of no-knead bread and each one always required the pot to be heated in the oven first before putting the dough in the pot. This recipe doesn’t call for that, which I found strange. Consequently, I had a very difficult time getting the bread out of the pot. Next time, I will definitely go the way of the other recipes and heat the pot up first. With that said, this is a perfect size recipe for one person, which will last a couple of days. Definitely will use this recipe again, but with the changes I’ve mentioned above.
