A rich, smooth mixture of melted chocolate and cream, ganache is often used to glaze cakes, pastries and cookies. It makes a luscious filling for macaroons.

Makes about 1 1/3 cups.
Ingredients
6 oz. bittersweet or semisweet chocolate,finely chopped
2 Tbs. unsalted butter
1/2 cup heavy cream
Directions
In a heatproof bowl, combine the chocolate and butter.
In a small saucepan over medium-high heat, bring the cream just to a boil. Remove from the heat and immediately pour the cream over the chocolate and butter. Using a handheld whisk, stir the mixture until the chocolate and butter melt and are smooth. Let cool until spreadable.
Makes about 1 1/3 cups.

Great and easy chocolate ganacheThis is a great and easy, quick chocolate ganache. I have made it with good chocolate that I have chopped up and also with Nestle's toll house semi-sweet chocolate chips. Works well with both and the taste is great too. (the chips do melt well into the hot cream)
