Baked Strawberry-Almond Oatmeal

We’ve given oatmeal a delicious makeover by adding fresh strawberries, sliced almonds, almond milk and warming spices. And it couldn’t be easier to make. Just combine all the ingredients and then bake. In about 30 minutes, you’ll have a comforting meal that will satisfy children and adults alike.

Ingredients

  • 1 1/2 cups (4 1/2 oz./140 g) rolled oats
  • 1/2 cup (2 oz./60 g) sliced almonds
  • 1 lb. (500 g) strawberries, hulled and halved
  • 1/2 cup (3 1/2 oz./105 g) light brown sugar
  • 1 tsp. ground cardamom
  • 1 tsp. ground cinnamon
  • 1/2 tsp. kosher salt
  • 1 egg
  • 1 1/2 cups (12 fl. oz./375 ml) almond milk
  • 3 Tbs. unsalted butter, melted

Directions

Preheat an oven to 350°F (180°C). Butter a large gratin dish or 8-inch (20-cm) ovenproof nonstick fry pan.

Spread the oats evenly in the prepared dish. Sprinkle with the almonds and top with the strawberries in an even layer.

In a bowl, whisk together the brown sugar, cardamom, cinnamon and salt. Add the egg and whisk to combine. Add the almond milk and melted butter and whisk until blended. Pour evenly over the oat mixture.

Bake until the oats are very tender and the liquid thickens, 30 to 35 minutes. Serve warm. Serves 6 to 8.

Rated 5 out of 5 by from Yummy healthy oatmeal! This oatmeal is really good! The picture somewhat misleading but the end result is still very good. It’s also very adaptable. I like to add blueberries as well. I use 1/2 tsp of cardamom and 1 1/2 tsp of cinnamon. I use Sucanat in place of brown sugar and use a little less than what’s called for. I also cut the amount of salt and butter in half to make it a bit healthier. I have been making this weekly for a very long time. One of my favorites.

Rated 4 out of 5 by from Great for a lazy Sunday morning out on the Patio Made this for breakfast today. Firstly, to agree with BlueEyes, the photo is deceptive on its presentation - shame on you Williams Sonoma ): Probably need to hold the strawberries and add them after the oatmeal is cooked. Also it looks like WS tossed the strawberries in some sort of glaze or sauce to get that glossy look. Will have to try that next time because the appearance does need some work. I like cooked strawberries so the change in strawberry texture did not bother me as it did for BlueEyes. As for taste, I think it came out great. Love the addition of cardamon. I did reduce the brown sugar to a 1/4 cup since I do not put sugar in my oatmeal and the 1/2 cup seemed too much. Came out great, not too sweet, but with a hint of sweetness. Used unsweeted almond milk. Used a spreadable lite butter (made with real butter and olive oil (no palm oil)) to keep the saturated fat down but keeping some of that butter flavor we love. Although delicious, if you make it "as is", there's too much sugar and saturated fat to call this a healthy breakfast. Just make some minor adjustments and viola! your in the healthy, delicious range. For some extra flair to each serving, add a dollop of plain non-fat greek yogurt or Icelandic style skyr to add some probiotic wonderfullness. OK not a real word but you know what I mean. This dish would make a nice addition to a brunch for family or company. As an end note the recipe says it serves 6 to 8. I think it's more around 4 to 5.

Rated 2 out of 5 by from Does not turn out like the picture!!! The picture of this recipe shows a yummy delicious strawberry almond oatmeal. I followed the recipe to exact and was very disappointed. It was very mushy! The oatmeal ended up being the consistency of instant oatmeal and the strawberry that were fresh had a texture of frozen strawberries that have been cooked. The cardamom was overpowering. It wasn't bad but it was not good either. It looked like a pile of leftover mush. I like the ideal of the strawberry almond oatmeal but not this recipe.

Rated 5 out of 5 by from Delicious Dish This is an amazing breakfast dish. I used my 8" Calphalon frying pan to make the oatmeal in. The oatmeal is very simple to prep, and if you have never used cardamon before, do not be afraid to try the spice. I myself have never used cardamom, and when I opened the spice jar it had a very pungent smell, and hesitated about using the spice. I used 1/2 teaspoon instead of the full, and was pleasantly surprised with the taste, the oatmeal was delicious. When I make this dish again, I may cut back on the brown sugar a little just to fit my families taste.
