Boost the taste of rib-eye steaks by marinating them with an herb-and-garlic paste, then brush the cooked steaks with more seasoning paste just before serving. Round out the meal with our Saffron Risotto.
Ingredients
- 2 tsp. finely chopped fresh rosemary
- 2 tsp. finely chopped fresh thyme
- 1 1/2 tsp. kosher salt
- 1/2 tsp. freshly ground black pepper
- 1/8 tsp. red pepper flakes
- 1 1/2 tsp. minced garlic
- 2 Tbs. olive oil
- 2 boneless rib-eye steaks, each about 12 oz.
Directions
In a small bowl, stir together the rosemary, thyme, salt, black pepper, red pepper flakes, garlic and olive oil. Reserve 2 tsp. of the herb paste.
Rub the remaining herb paste onto both sides of the steaks. Let stand at room temperature for 30 minutes.
Preheat a cast-iron fry pan over medium-high heat for 5 minutes. Place the steaks in the hot pan and cook, turning once, for 2 to 3 minutes per side for medium-rare. Transfer to a cutting board and brush the tops of the steaks with the reserved herb paste. Cover loosely with aluminum foil and let rest for 5 minutes. Slice the steaks thinly across the grain and serve immediately. Serves 4.

Not Sicilian
Just because there is garlic it is not Sicilian Sicilian steaks are breaded and usually a cheaper peice of beef because Sicilians are poor with rich appetites. They could never afford a tbone or ribeye. Learn the culture before naming a dish

A great reward for a long week.
The garlic herb paste for this is incredible. I typically don't cook steaks that often, but i will certainly make this again. As i mentioned before. This would also be great over charcoal too.

Just awesome!
Just made this tonight. My husband said he would die a happy man , if he was to die tonight :) he did say there was one thing he didn't like about it, his plate got emptied to quick. Lol I love it :) made me feel good. Just addd more of everything and used EVOO instead, used more because I used 4 NY Strip Steaks

Perfect for Weeknights & Special Occasions!
Delicious! So flavorful! I made this recipe last night for my boyfriend. Followed the recipe exactly; cooking times stated were perfect. I would use less salt next time. Definitely a keeper :)

Delicious way to spice up a steak
My husband and I just made this marinade and it was so tasty. We have steak often and it was a great way to add different flavors to our ribeyes. We will definitely make this again. Very herby and flavorful.

Sicilian Steak
Often I am disappointed with a new recipe. Not in this case. This recipe is a winner!!
I followed it exactly, marinated it for an hour and my wife an I absolutely enjoyed it.
